This is the best version of Ube cake online. I made it several times already as well as the roll cake and gifted it to friends. Made this for my birthday today. I substituted canola oil with olive oil, vanilla extract for the ube extract (didn't have any), and Russian buttercream for frosting. It came out masarap. The sweetened condensed milk of the Russian buttercream gives off a taste of coconut for some reason. Love your recipe, it's a keeper, I wrote it by hand! Next time ube cake for Nanay will have the ube extract. Salamat for sharing Kurt!

I made this for New Year’s Eve 2023, it came out so moist, I made a 3 skinny layered cake and 12 cupcakes. Thank you so much for sharing this recipe and all the extra tips to make it moist and no domes on top, and you made the instructions so simple I was able to follow it almost to a T. Tofia Kepasi Hi Tofia. I get my ube jam from a local Filipino store in my neighborhood in NYC. Depending on where you live, it’s available in Filipino/Asian grocery stores or online. If you’re not able to find ube jam, you can substitute with ube powder - you just need to rehydrate (according to packet instructions). Hope this helps! 😊
@@natelloyd4796 Hi Nate, thanks for your question. Yes, you can use fresh ube. I'd suggest making it into a paste (halaya) before mixing it into the batter. Just boil 1 pound of fresh ube (peeled) in one can of coconut milk (14 oz) and add 1 cup of granulated sugar. Let this boil on low heat for about 40 minutes till the ube is soft. Try to mush up the ube as best as you can - use an immersion blender if you have one. Once it is a thick paste, let it cool to room temperature, and then mix it into the wet ingredients like in the recipe video. Hope this helps! :)

Aaron Nolos Hi Aaron, thanks for your question. You can use 1/2 cup of boiled/mashed ube instead of the 1/2 cup of ube halaya. You might want to add a little extra sugar to compensate (ube halaya has some sugar in it) - but it shouldn’t make too much of a difference to the overall cake since the frosting carries the majority of the sweetness. Hope this helps! 😊

I added macapuno on top of the cake. haha, tried making a rosette topper but it’s not thick enough so it looked like a melted rosette. But the cake itself tastes so good! My family loved it. Hi Janine, thanks for your comment! I'm glad to hear your Ube Overload Cake turned out well. You can just use half of all the ingredients if you'd like. If you go to my ube roll recipe, it's exactly the same batter except ingredients cut in half - so the math is already done for you. Hope this helps! :)

Hello! Yes, you can use ube powder instead of ube halaya - just reconstitute it in hot water (per packet instructions) to make an ube paste, and add 1/2 cup to the wet ingredients, like in the video. Hope this helps! :)

The paper towel& foil technique is a life changer! The cake is soft, delicious and the texture is perfect! Just putting in finishing touches and it already looks amazing! I had to make some tweaks though because some ingredients were not available. I used almond milk and coconut oil instead. It still tastes amazing! Thank you so much! My lola loves ube cake and will give this to her tomorrow for her birthday! Im sure she will love it too!

Actually, your recipe is doable in keto. Just few conversions and no ube halaya ( just plain flavoring). Anyway, thank you so much! Your recipe is the best so far with some tips for the books!!

Tofia Kepasi Hi Tofia. I get my ube jam from a local Filipino store in my neighborhood in NYC. Depending on where you live, it’s available in Filipino/Asian grocery stores or online. If you’re not able to find ube jam, you can substitute with ube powder - you just need to rehydrate (according to packet instructions). Hope this helps! 😊

@@natelloyd4796 Hi Nate, thanks for your question. Yes, you can use fresh ube. I'd suggest making it into a paste (halaya) before mixing it into the batter. Just boil 1 pound of fresh ube (peeled) in one can of coconut milk (14 oz) and add 1 cup of granulated sugar. Let this boil on low heat for about 40 minutes till the ube is soft. Try to mush up the ube as best as you can - use an immersion blender if you have one. Once it is a thick paste, let it cool to room temperature, and then mix it into the wet ingredients like in the recipe video. Hope this helps! :)

Aaron Nolos Hi Aaron, thanks for your question. You can use 1/2 cup of boiled/mashed ube instead of the 1/2 cup of ube halaya. You might want to add a little extra sugar to compensate (ube halaya has some sugar in it) - but it shouldn’t make too much of a difference to the overall cake since the frosting carries the majority of the sweetness. Hope this helps! 😊

Your ube cake recipe is divine! It’s my first time to make a cake and it turned out well. I added macapuno on top of the cake. haha, tried making a rosette topper but it’s not thick enough so it looked like a melted rosette. But the cake itself tastes so good! My family loved it. If you go to my ube roll recipe, it's exactly the same batter except ingredients cut in half - so the math is already done for you. Hope this helps! :)

Hello! Yes, you can use ube powder instead of ube halaya - just reconstitute it in hot water (per packet instructions) to make an ube paste, and add 1/2 cup to the wet ingredients, like in the video. Hope this helps! :)

The paper towel& foil technique is a life changer! The cake is soft, delicious and the texture is perfect! Just putting in finishing touches and it already looks amazing!
I had to make some tweaks though because some ingredients were not available. I used almond milk and coconut oil instead. It still tastes amazing!

@@cookingwithkurt oh Thank you. I do keto thats why those are my milk and oil. My lola does not do keto so i had to make a regular one. I had to make ube halaya from scratch too! Actually, your recipe is doable in keto. Just few conversions and no ube halaya ( just plain flavoring). Anyway, thank you so much! Your recipe is the best so far with some tips for the books!!
