I tried 0.1 mm and 0.5 mm. Another question, if using chocolates like wafers for coating with the cocoa butter, do you see that they do not blend with the cocoa butter usually? Every time I use a coating wafer it doesn't stay with the cocoa butter on the mold. Thank you!

Excuse me, I have a question, when I bring out chocolate from mould chocolate stain my hands why? My hands colourd when I touch chocolate . What shoul I do?
Considering that cocoa butter has low melting point, doesn't it stick to hand when one eats it (as body temperature is usually above the cocoa butter melting point)? I've tried mixing various colours with plain cocoa butter but whenever I touch the chocolate the colour starts coming off :(
I typically coat the molds with a light brushing of melted cocoa butter with a cotton ball/round. This not noticeable when the chocolate is molded. The colored cocoa butter may rub off when eating, but the coating is so thin, I rarely have an issue.
It depends, the coloring used needs to be fat soluble. That is very important, also I see so many people not tampering the cocao butter, which does makes a ton of difference in the final product.
when using the air brush technique can you just paint the red color on instead of using the gun? I love the whole splatter look but I don't have a air brush machine for the red color.
You can use a regular brush to paint on the red. I would suggest 2 coats. It would be painted on like how the pears were painted. It will not look exactly like an air brush, but it will still look very nice. Good luck! Send photos of your chocolates.

I have tried various airbrush systems, and I think the badger (low end price) with gravity feed works the best. You will need to clean out the airbrush after each color usage and make sure it is dry before adding more colored cocoa butter. Badger Model 100 LG and G. Higher end units are intended for true paint and they will clog easily.
Here are possible reasons. 1)did any water get in the colored cocoa butter 2) was the colored cocoa butter fully melted and bottle shaken? 3) the chocolate may not have been tempered properly. If you think water got into the colored cocoa butter, discontinue use and toss out as there is no way to fix the problem.

Yes you can but result will look not so perfect and professional. Especially the bottom of candy. But it's a good start to learn. But remember - the silicon mold you bought should be glossy and shiny, really smooth inside. Good luck!

You can use the dry colorant for other food purpose. The only other ingredient in the color cocoa butter is soy lecithin.

I always tempering cocoa butter (Melting, than cooling on marble to 26-27º C.) and never have problem.
