About Noon Chai
Noon chai, also called shir chai, gulabi chai, Kashmiri tea or pink tea, is a traditional tea beverage, originating from the Kashmir Valley, made with gunpowder tea (green tea leaves rolled into small balls), milk and baking soda. It is usually served at breakfast time in Kashmir Valley. People prefer to take tea instead of taking any fruit or vegetable for breakfast. Kashmiri bread is served along with tea and butter also.

Noon chai is an essential part of Kashmiri breakfast and supper, It is consumed with various types of traditional bread made in Kashmir. Kashmiri chai or Kashmiri tea is pink, milky and creamy and is usually garnished with a sprinkling of chopped almonds and pistachios. |

Sorry to say sir there is a special and different tea leaves for this tes, not the regular green tea leaves more over u don't need to boil it for so long, with the tea leaves and little waterand soda-bi carb u can make the decaution
may b where he drank it from, they made it this way, like strangely in Madhupur, Jharkhand, I've seen them burning the milk mildly and make tea with that, its odd but yummy like tandoori chai
Yes there is but it's not usually available and we kashmiri who live outside Kashmir also use khewa tea leaves to make this (green tea leaves )

Tibetan area teas with salt have a different method. The tea leaves are pounded in a long cylindrical vessel and is made with butter, not milk. In Ladakh, that is called gud-gud chai

Thanks for this and the interesting fact that noon means salt in many languages. I am British and I learned Russian. In Russian Sol is salt...but also their word for sun contains the sylible SOL - it is Solnse. Now in English we say Noon for Midday the time when the sun is at its highest in our sky. Afternoon is obviously refering to after the noon ( midday). In the UK we got all our tea traditions from our connections to India. So even the English Afternoon tea is connected to india. We even called tea "Cha" because so many normal British people had to go and work as military people in the bad days of colonialism. For years now I have been seeing the connection between SALT and the SUN. And I feel that the word NOON is connected to the sun too....for English speakers it is. So with my knowledge that a LOT of common Russian and English words are from the Sanskrit Root languages I am very interested in learning things like NOON meaning salt. It is another part of the cultural puzzle I am putting together. And I am finding so many beautiful things that connect myself as a British born person to Russia and then to India and all the other regions of the sub continent. I love all culture from India and surrounding countries because I was born in the East of London where there are so many different cultures and food and language are the real sources of folk history which never go away and this is where the real story of us all is hidden. I am a big fan of Praveen Mohan's ancient history channel and he has unearthed a lot of cross cultural things. It seems like at one time maybe thousands of years ago we had a nicer connection with each other more as brothers and sisters than as invaders and slaves and for most of us we can feel this within our collective consciousness. Perhaps Salt is the key to our free electricity on planet earth...who knows. Thanks for a fascinating recipe and story.

If you have used cold water with ice cubes , pink clr could have come easily. Moreover decoction has to be reduced from 3 cups to 1cup .

This is not at all kashmiri noon chai. Tea leaves are totally different that is where the actual taste and a bit sweetness comes from.... Colour of decoction is totally different here....🤷

Baking soda is healthy look it up. This tea is unsafe if 4 or more cups are drank in a day.

It is also called Sheer Chai - possibly from Ksheer or milk - chai. You need to use special kind of tea leaves for it, but often made without it with other tea leaves. The soda must be added after the first long boil has reduced the volume. In Patna, during Eid, you can get the same pink tea called Sheer chai, but there it is actually with sugar!!
