  • Ingredients
    200 g fermented fish "mam ca linh", 8 oz.
    200 g fermented fish "mam ca sac", 8 oz.
    2 tbsp minced garlic
    2 tbsp shallot, thinly sliced
    2 tbsp lemongrass, minced
    200 g pork belly, thinly sliced (optional)
    500 ml coconut juice
    1 egg plant,bite-sized & soaked in salted water
    2 stalks lemongrass, smashed
    500 g catfish steak
    500 g shrimps, peeled but leave the tails on
    500 g squid, cut into rings
    Fresh greens platter: bean sprouts, garlic chives, mint, cilantro, fish mint, perilla, water spinach, banana blossom
    3-5 red chili pepper
    2 lime, cut into wedges
    500 g roasted pork, chopped

    I love that you show how to make recipes like this! :) I'm 2nd generation Vietnamese American and my mom and grandma loooooove all varieties of mam. They've taught me to appreciate it too. I think that kinds of recipes is a great way to stay in touch with your roots because mam is such a fundamental part of Vietnamese culture. I hope I can convince my children to eat it too some day.

    This is seriously one of the best meals I've ever eaten. It's so flavorful and tasty, I'm craving it. Too bad there's no Vietnamese cuisine in my country and I can't have seafood here to make it by myself. Miss Vietnam :(

    southern Louisiana seafood gumbo contains a light or dark brown roux (oil and flour...not butter and flour). Maybe we can called it "Vietnamese noodles and seafood with/in anchovy broth." I understood you perfectly, but is the Cajuns that don't.

    This sounds so awesome! I grew up in Denmark with smorrebrod and rollemops, so a fish paste soup sounds like heaven :) To the Asian market!

    This dish has been my favourite since I was little! My mom never made it at home because of the smell so I never ate it as much as I wanted to. Like you, if I spot this in a menu, I order it right away haha

    I love this! Could never have it at home, hubby can't stand the smell. It's smelly but so good.

    I had this one before at my uncle's house, it tasted amazing!!! One thing though, your breath will smell really fishy. Make sure to have some mints ready :)

    tuy em ăn chay nhưng xem clip này của chị làm em nhớ lại hồi còn bé cứ đòi mẹ dẫn ra đầu ngõ ăn bún mắm này hehe ăn thì ngon lắm ăn bao nhiêu tô cũng được nhưng sợ nhất là bị dính vào tóc vào áo , hôi được hôi quài luôn haha

    My favourite and alot of vietnamese favorites, we dont add eggplant if you're going to eat it with noodles, but thinly sliced white cabbage, bean sprouts and mint ans chinese chives

    Not that bad,only look and smell is bad, but the taste is unbelievable good.... When u get used of the taste u will get addicted to it... Pho and Bun Man is the best

    is it weird that as a white guy I thought this was amazing the first time i tried it? I know it's not beloved of all Viets..but i love the pungent flavorings...but I'm used to strong cured meats and pickles

    use the thickest noodles you can find for this dish cause the broth is quite salty.

    Make sure when u make this soup that your neighbors aren't home because it smells very bad and they might call the police😂😂😄

      Well Mixed hahaha! I think they cannot call police because they could not realize what and where smell came? Then, even though police is coming, so he/she cannot get in or give you the ticket because the smell kills them first as well. Lmao! 😂😂😂. Anyway, I think you can eat this soup right.

    I tried something similar in Penang. It was a fermented shrimp broth served with noodles and egg for breakfast. It was spicy and pungent and delicious! I miss strong flavors like this.

    By the way, there is a Mexican soup called Menudo made with tripe (cow stomach) and it smells horrible at first, but when it's all fully cooked after 3 hours, it's soooo good!!!!

    I saw a Thai word for it on the label. I know what it is & I'll tell you I'm not going anywhere near this fermented fish!! I feel sorry for your neighbours LOL! Anyway, you make it looks appetite :)

    I like your videos but this dish you are missing the finger root in the broth, in Vietnamese its called ngai bun. I'm Vietnamese and I make this quite often as it is one of my fave dishes. I think the finger root makes a world of a difference in the flavour. ;)

    Thank you for making a tutorial on this dish! This is my husband's all time favorite dish but the only person who could make it was his mom whenever she's in town. I will definitely try this recipe out! They usually eat it by dipping veggies into the soup and eat with a side of rice. What spices do you suggest adding to make it a bit more spicy?
