    I haven't had this in so long. The crunchy bamboo shoots, the light duck broth, and the refreshing ginger sauce is such a great combination!

    The recipe looks great, Helen. If duck were more accessible and cheaper in the US, I'd be eating it all the time. But then I'd have the dilemma of hunting down bamboo shoots. The Vietnamese population is small here compared to where I used to live, so it's a bit of a drive to get good, fresh Vietnamese ingredients. Thanks for sharing such a great recipe, though.

    Cam on em da chia se. A em cho chi hoi tham xiu. Cai chén đựng nước mắm em mua ớ đâu vậy em? Chi rat thích loài chen do. Nhung ve Việt Nam tim may cho voi siêu thi ma van ko thay.

    Is the bamboo shoot toxic? is that why you boil it to remove the toxins? Great recipe, I've never tried duck, but for a first timer would you suggest roasting the duck or boiling it?

      +Diva Licious bamboo shoot does have some toxic elements in it, so you want to remove by boiling.

    yum. Duck is a little expensive here in the States, about $26 or 3x the price of a chicken. I can find one cheaper but it's usually old and tough.

      JosieTanPhotography No, that's the price from the regular grocery store. Asian market duck is a bit tough.

      Just cook it for longer. The meat will become tender but still have texture and not fall apart.

      It depends on the size and the type of duck you use. It could take longer, abt 40-45 mins

    A local Vietnamese restaurant has a similar dish--mi vit tiem or roasted duck soup, with baby bok choy, shitake mushrooms and thin egg noodles. Instead of raw duck, will it work to substitute for a roasted duck in your recipe? It is one of the best dishes I have ever eaten. The broth is dark and rich full of the roast duck flavor.

      Thank you for telling me. After I entered my comment, I found that video. I Googled the name and her version popped up. I'm going to have to make it. That is one good soup. It is very rich, hearty and satisfying.

      Yes, I've made Helen's version before. It's really good. The only difference I made was that I chopped the duck into bite-sized pieces on a chopping board with a cleaver at the end to make the dish easier to eat with chopsticks and a spoon.

      The restaurant also leaves pieces a bit too large, plus with bones. I think it is a good idea to bone it and make the pieces no larger than 5 cm (2 inches). I think it would be difficult to eat a hind quarter whole, without a knife and fork. It would be messy to pick up.

      It's because some people enjoy eating with their hands. For example, hold the chopsticks with your right hand to eat the noodle while your left hand hold the drumstick :D A lot of small, simple Vietnamese foodstalls which can be found on the street don't chop the duck into small piece so I think it's your choice to make the piece smaller or not.

    To Doodah Gurl---I've dined at a local Vietnamese café for at least 25 years. I have tried just about everything on the menu and have never been served meat on the bone. They may have Americanized the dishes. I am not opposed to gnawing meat off the bone, I'd just rather not have it in soup. I think it is messy. When my mother made chicken and noodles, she used whole chicken pieces, with the meat cooked long enough it was falling off the bone. When I make it, I bone it. I think it is easier to eat, but ribs, fried chicken and similar foods are OK to gnaw on a bone. Personal preference.
