Damn man, they look awesome. Thighs are so underated and much better value, it tastes much nicer than breast in my opinion.
I miss your bbq vids and product reviews/demos!

@2024JayZ I will be starting up the BBQ in about 2 hours for the last batch of chicken thighs. We dried the skin off and put in fridge wrapped in paper towel with the idea being trying to get it crispy like Peking duck... I will leave 2 pieces skin side up like you mentioned. The bacon sandwich cooked thighs were pretty tasty!

@MsChopperdog Thanks, glad you enjoyed it! Did some between bacon yesterday that was very good too. Gonna give the crispy skin another try today, wish me luck!

@SmokeyGoodness Thanks bro, was tasty but still trying to dial in that skin, I think raking my coals out more even might be a key... such a fine line between crispy skin and burnt to a crisp lol! I hope I get it soon as I plan on this being one stage demo for the circuit...

@faithslanding Thanks! That is Cowboy lump... I have not got around to building my own charcoal maker, but I have a lot of oak to use... If I do not get a charcoal sponsor this year I will be making my own I spend almost $1000 a year on charcoal.

I can tell your not very informed on charco, when you first lite the charco it puts out a smell in the chicken will pick up and taste like it ,always start off with plenty and just adjust your air vent to make it last, OR next time just use wood instead just leave it open till you get the white smoke you need, just FYI, good video remember BBQ is an art and passion not a time killer

This method sucks. Season them first and let sit for 4 hrs in fridge then sear them and sauce em up last
