    I feel like this video has a better balance between cooking sounds and narration compared to the previous experimental video. Much better in my opinion.

      The audio in the eggs benedict video felt more like a gimmick, here it's a nice, unintrusive addition to the original formula

    With the slower audio, these new videos feel like your older ones. Which is awesome, and gives them a nostalgic and simple feel; perfect for the Basics series. Hope you keep up this format!

      I was subscribed to Babish years ago and then started to not like his videos as much so I unsubbed. Randomly saw this in my recommendations and clicked it and based on how he sounded, I thought it was an old video.

    Really like the quieter music, overall gives a calmer, more easily digestible vibe. Not so important for normal Binging episodes, but for Basics it's much easier to rewatch.

      @Spacialvekter Unfortunately no. I'm not sure what key words to use to try to find it. He used to include the background music in the description of his videos but stopped doing that a long time ago. Have you had any success?

    I like hearing the cooking/prep sounds (sizzling, chopping, etc...) and how soft the audio is. This format is very nice!
    And the steaks look so delicious. I'll have to try making some like this soon

      I guess it used to be about "cooking WITH Babbish" in a sense. It was much more like being in the kitchen with him than some sort of sitcom thing.

    I'm with the others, the audio balancing here is much better. Again the audio for the red wine sauce helps distinguish how hot/crackly you want the pan to be upon insertion

    I enjoy this new format. The slower, calmer narration makes the information easier to follow while the addition of the cooking sounds makes it seem like I'm there learning. I don't think it would work for binging, but is very welcomed in basics. the music is comforting, but a little distracting. overall, a very welcomed improvement

    6:30 also can add half as much baking soda as sugar, it's basically a pinch, but also helps encourage browning

    I agree with the consensus, audio mix and tone on this one is way better. Feels like a chill explanation without getting so deep into ASMR territory that it gets on my nerves

    I love the new format, leaving all the sounds in. I'm a huge fan of cooking videos with no talking and just the sounds of the kitchen as well, but you can't deprive us of that voice.

    Pan-searing, yes. But what about microwave-oven finishing the temperature? I read it's perfectly fine as long as there is a way for the moisture to go.

    I’ve been watching your content since you made the Aglio Olio, this is one of your best formats with a mix of the cooking and voice over in my opinion.     Reduce the wine before adding the stock. It's adding them together that results in an unpleasant purple colour, instead of a glossy brown colour.

    I like the cooking sounds, but I am not that big of a fan of the slower cadence. if it is easier then it is fine but the faster does seam a bit more natural vs stilted

    If you did a whole video on the basics of maintaining and cleaning your kitchen tools (cast iron, stainless steel, wood, knives) with the audio sounds included, the ASMR would be off the charts.

    I always thought you rested between bake and sear on the reverse method so that you could slice/serve right after searing.

    This one’s an improvement on the last one which was …jarring to say the least. However, the music is for sleepy time, not fun kitchen time and the kitchen sounds complete with the dialogue. The classic format is definitely king. Great channel. Great content. No need to change.

    For flank steak: If you have an electric carving knife, use it! The twin serrated blades tear up the meat as they cut and make the pieces much more tender than with a normal knife.

    I respect the desire to experiment - gotta keep it fresh after so many years! I enjoy the subtle end of the spectrum with cooking sounds, but if this is a new format staple, the mixing will need improvement. The last 2 videos have had bits where your voice is drowned out by searing meat, and the cooking sounds become distracting noise rather than a cozy backdrop.
    Combined with the more monotone delivery, this iteration feels like a hard pivot into the ASMR trend that mutes what I love about your channel/voice. But with experiments comes data, so I look forward to how you develop this refreshed style!

    I think I'll watch no matter what, and I hate to be so negative, nor is change a bad thing but I don't love the ASMR style. I don't hate the slower pacing but it feels very sleepy

    Love flank steak, one of my favorites cuts of meat. Ribeye is great but sometimes I just want something that's really meaty meat, and to me that's 100% flank. Cooked to the right point it's tender juicy and delicious.
