Ingredients
Serves 2
For marinade
300g skinless chicken breast/thighs
2 tbsp thick yoghurt
1/2 tsp salt
1/2 tsp turmeric powder
For the sauce
3-4 tbsp vegetable/coconut oil
2''' cinnamon sticks
3 green cardamoms
2 cloves
2 bay leaves
2 onions (pureed)
1 tsp ginger and garlic paste
1 green chilli (deseeded)
1 tsp coriander powder
1 tsp garam masala powder
1 tsp turmeric powder
1 1/2 cup coconut cream
3 tsp granulated sugar
1/2 tsp salt

I’ve tried cooking dozens of different recipes to perfect the taste of a restaurant korma and whilst some have been really good, this is in my opinion is the best yet - and the easiest. No special ingredients, no nuts, no thick cream (except the coconut cream) and no chopping of onions! Forget my portfolio of tried and tested Korma recipes - this has now become my family favourite. I was originally going to cook a Kashmiri curry with added fresh fruit but did this curry and at the end just on a very gentle heat, added some fresh lychees and banana chunks - delicious. Thank you for your good, clear instructions and tips.

My first husband was from Glasgow and his family immigrated to the States when he was 16, He became a US citizen and stayed in the US, but his parents moved back to Glasgow when they retired. I had the opportunity to visit them on a trip to Scotland and they introduced me to Indian cuisine. I had Chicken Korma and I fell in love with it! After returning to the States I made it my mission to find Chicken Korma at various Indian restaurants here but none of them compared to what I had eaten in Glasgow. I can’t wait to make this and I am keeping my fingers crossed that my search is now over and I can have it anytime my heart desires! Thank you!

This was soooo good, came out just like a restaurant korma. Only thing I couldn't figure out is where to put the 1/2 tsp salt. I just put it with the sugar in the end.

Will it taste the same if you replace coconut cream with Greek yoghurt/whipping cream?

Not really. You lose the coconut flavour which is needed, and yoghurt will give more of a sour flavour. Not that you can't do it of course. It can still be a lovely dish. Just different. If you want to use cream, use single/standard rather than whipping cream if you're buying it specifically. If you already have whipping cream in the refrigerator, then by all means use it.
Great recipe. Is the technique with the onions common to other dishes? I've never seen someone cook them as a slurry, great technique!looks like it really concentrates the flavor and produces an even caramelization.
Thank you for your compliments. The cooking with sliced, chopped, minced or pureed onions or other fresh ingredients is decided by the end result or type of cuisine. Cooking onions throughly is what makes a dish a winner dish 👍🏾
Yes it's fairly common. You want the flavour onion gives, but not pieces as the sauce should be smooth.

I'm looking forward to trying this. I've followed quite a few recipes so far and it's been nothing like a korma from a takeaway or even a supermarket ready meal. Each time, it's been horribly sickly, but yours has lots more onions and less fat, which definitely seems better!

Is coconut cream the same as coconut milk? I’m from Oban 🙌🏼 love seeing another Scottish person 🧡
No its not, the coconut cream comes in a small cardboard box 200 G and is solid, coconut milk comes in a tin 400 ml and is liquid although it can settle out and you get the coconut cream at one end and coconut water at the other, Look for blue dragon brand in the supermarket it is a good product P.S. both can be used in recipe's although the coconut cream is more concentrated, so adjust the quantities accordingly

Can I use coconut milk instead of coconut cream. Or does it have to be coconut cream?
When do take out the cloves, cinnamon stick, peppers and Bay leaves? Or do you keep them in right to the end?
I just fried them for 20 seconds then took them out and kept the oil in the pan.
I only removed them before adding chicken. You did the right thing. After they have released the flavour you can remove them right away.

You can use cauliflower, Broccoli, any kind of mushrooms, peas, potatoes or even chickpeas.
To make coconut cream, get a good quality brown looking coconut. It should be hard on the outside and firm inside not soft. Peel and separate the flesh, wash and grind into a thin coarse mix. Now squeeze all the milk using a thin muslin cloth or coffee filter. Leave it in a bowl in fridge for 3 to 4 hours. The water will settle at the bottom on the bowl. Scoop out the thick cream from the top of it carefully with a spoon.
There you have it 🙂
Do you recommend leaving the chicken in the marinate overnight? I have never heard of things being overly marinated so I would guess it is ok?

1:00 I knew I was following a good recipe when I saw the generous/necessary amount of oil needed for the recipe. Most recipes I’ve seen in You Tube use one or two tablespoons, not enough for the amounts of ingredients to cook. Thanks for sharing.

Apologies for replying late. Been busy at the weekend. You could buy the KTC coconut cream from either KRK on woodland road or from Strawberry Garden in Pollokshields.
