DAL MORADABADI KI CHAAT
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 4-5
Ingredients
For Cooking Dal
3-4 cups Water, पानी
2 cups Yellow moong dal (soaked for 30-40 minutes) मूंग की दाल
Salt to taste, नमक स्वादअनुसार
A pinch of asafoetida, हींग
A pinch of Turmeric powder, हल्दी पाउडर
3-4 tbsp Butter, cubed, मक्खन
For Topping
2-3 no. Green chillies, finely chopped, हरी मिर्च
1 no. large Onion, finely chopped, प्याज
For Masala
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Cumin seeds, जीरा
1 ½ tbsp Black peppercorns, काली मिर्च के दाने
1 no. Black cardamom, बड़ी इलायची
For Tadka
2-3 tbsp Oil, तेल
2-3 tbsp Ghee, घी
5-6 no. dry Red chillies, broken into half, सूखी लाल मिर्च
A pinch of Asafoetida, हींग
A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर
For Dal Muradabadi
½ cup Water, पानी
3-4 tbsp Butter, cubed, मक्खन
Cooked dal, पकी हुई दाल
For Assembling
Cooked dal, पकी हुई दाल
Butter, cubed, मक्खन
Lemon juice, नींबू का रस
Prepared Tadka, तयार किया हुआ तड़का
A pinch of Chaat masala, चाट मसाला
Onion, finely chopped (optional) प्याज
Green chillies, finely chopped (optional) हरी मिर्च
Prepared Masala, तयार किया हुआ मसाला
Papdi, crushed, पापड़ी
Green chutney (optional) हरी चटनी
A pinch of degi red chili powder (optional) देगी लाल मिर्च पाउडर
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Cooking Dal
In a pressure cooker, add water, yellow moong dal, salt to taste, a pinch of asafoetida, turmeric powder, butter, close it with a lid and cook it for 3-4 whistles until cooked well.
Mash it well with the help of masher and Keep it aside for further use.
For Masala
In a pan, add salt to taste, cumin seeds, black peppercorns, black cardamom and dry roast it on medium flames for 2-3 minutes until aromatic.
Transfer it to a mixer grinder jar and grind it to a fine powder.
Keep it aside for further use.
For Tadka
In a pan, add oil, ghee, once it's hot, add dry red chillies, asafoetida and toss it for a minute.
Add degi red chili powder and mix it well.
Transfer it to a bowl and keep it aside for further use.
For Dal Muradabadi
In a kadai, add water, butter and get a quick boil.
Add cooked dal and let it cook for a while on low flames until thick.
Transfer it to a serving bowl, add butter, lemon juice, prepared tadka, a pinch of chaat masala, green chillies, onions, prepared masala, papdi, green chutney and a pinch of degi red chili powder.
Garnish it with coriander sprig and serve hot.

भाई जी मै मुरादाबाद से हू ।मै अभी अभी आपकी रेसिपी देख रही हू ,इसमे आपने साबुत लालमिर्च तेल मै तली है उसे घी मै फ्राई किया जाता है ।इस दाल को सर्व करते समय सबसे पहले पनीर का पीस रखा जाता है ।सबसे बाद मै ऊपर से अदरक के जूलियन जरूर डाले जाते है ।और इसके मसाले मै काली मिर्च नही डाली जाती इसकी जगह भुने जीरे के साथ भुना धनिया मिलाया जाता है ,और इसके साथ मुरादाबाद मै जलेबी सर्व की जाती है ।,हमारे मुरादाबाद मै सुबह सुबह हर चौराहे पर दाल जलेबी का ठेला लगता है ।

हर चीज़ में पनीर डालना पंजाबियों का शौक़ है। असली मोरदाबादी दाल में कोई पनीर नहीं डाला जाता। अदरक भी अपने शौक़ के हिसाब से डाल सकते हैं। एक बात पक्की है इस दाल का कोई जवाब नहीं है
I remember, during my childhood,in my village, a person named Latoori used to come to sell this moong daal on a cycle along with a khomcha ( a high stool type stand made of staw) tied to the carrier of the cycle, and container of daal in the front basket of the cycle and all the accompaniments & leaf donas in a bag on his shoulder... He used to shout at our doorsteps and used to keep his khomcha down , put everything on it & used to feed us that heavenly daal every evening.... Our summer holidays were never complete without Latoori ki chaat...❤🎉

Hello this daal is cooked same way and served with same condiments in Bahawalpur. I have grown eating this and is my favourite till today. I live in Lahore but my khala cooks it and sends it all the way to lhr from Bwp. I’m loving your videos a lot. I’m 8 months pregnant and these videos are therapeutic for me.
