I made this today & I know I’m probably using the wrong cheese (that’s all I had in hand) but omg! It’s so easy to make & it’s so creamy! I think I added extra but 🤷♀️ I love cheese. Thank you Benji for such an easy recipe that everyone can do, especially when you’re on a time crunch.
Love these Benji! I failed miserably making Carbonara as the egg curdled and the carbonara became really dry and not good at all. This video pushed me to do a 2nd attempt! Your tip on leaving the noodles in the fan off of the heat for a few minutes did the trick! Thank you!
Benji out here on these UA-cam Streets cooking up a storm. I had no idea carbanara was made that way. I always had it in the restaurant and had no clue, it looks delish, I think I'm going to attempt to make this one as well, pray for me, lol.

I literally made this 2 nights ago and followed your recipe!! I wanted to ask, I had left overs. Would it still be ok to eat the following day, especially with the raw egg?
Assuming you refrigerated it, the egg shouldn’t pose a health risk. Just make sure to heat it up slowly so you don’t cook the egg. It make not be as good the 2nd day but it’s still edible
I tried your recipe and made the same mistake with the egg. I didnt let my pan cool down and immediately added my egg mixture. But i guess i learn from my mistakes
i went to the oldest italian restaurant (in the US) on a date with hubby and sadly did not enjoy my pancetta vodka pasta. it was so bland and the pancetta tasted sour not like cured you know. in ghana we et cured beef which i love but i spat out the pancetta and gave the rest to hubby, but your carbonara looks so good!!! similar to italian chef Gino's!!! well done Benji!!

Is it me or is Judy not happy eating in the room? Me thinks she wanted to go to a fancy place to have a romantic candlelight dinner. The strain of looking after 5 girls is showing in her face.

@BenjiManTV your gonna like it I usually use a pound of meat to a pound of pasta so 3/4 lb bacon or pancetta or guancale to a 1/4 lb prosciutto I've made carbonara with all 4 pork products that was the best but for most people bacon is the easiest to find and to me the best tasting followed by pancetta than guancale but always try traditional first guancale is hard to find you can get it online but it's expensive compared to bacon which is the least expensive pancetta is generally twice the price of bacon and guancale 3 to 4 times the price but once you start adding prosciutto you won't go back to just one of the three bacon products I usually cook tge prosciutto when the bacon is almost done don't put it in the same time as the bacon

Add a little prosciutto to it puts carbonara over the top won't make it without prosciutto
