    Hey Benji! Years ago, I made lasagna and said I was never going to make it again due to the clean-up and how time consuming it is. When you made the video for Mama's one year, and you talked about how much she loved your lasagna I decided to try your recipe in honor of her. Your recipe is amazing!! Worth the time and clean-up. Shared the lasanga with my in-laws and they enjoyed it as well. Thank you from the bottom of my heart for sharing your passion of cooking with the world.     Benji, when you started the bechamel, the butter and flour combo was a white roux, you can cook it darker for different sauce recipes. The rule of thumb with the butter and flour ratio is 1:1 - for me it was 50g flour for 50g butter. I make bechamel different now because I am coeliac but it's very similar. I'm pretty sure the ricotta in lasagne is an US thing, where i come from we use bechamel (never add salt though and definitely not 'parmesan') - never the ricotta version.
    If I know I'm going to be busy that week, I will make spaghetti bolognese one day and make a huge batch of bolognese sauce for lasagne 4 or 5 days later and just whip up the bechamel on the day and it's so easy and fast.

    I have made your lasagna so delicious it’s definitely my favorite style of lasagna. I did learn 2 things this time about your bechamel. 1. How to keep the top of the bechamel from getting that layer on top didn’t know it was from the air just thought it was because it’s getting cold.
    2 turning the heat off when adding the cheese now it makes since why my cheese breaks sometimes. lol
    Thank you benji for your cooking videos. My all time fav dish is pasta ala checca you made yeears ago.

    Literally never made a lasagna with ricotta in my life, always bechamel, and multiple thin layers of sauce, lasagna sheets, bechamel, lasagna sheets, sauce, repeat. I dunno about the States but it’s very easy to get tetrabrick/jarred bechamel in Gibraltar and Spain. Handy in a pinch!

      I never use prepared bechamel. It’s very easy to make. Jarred bechamel - no thanks.

      @@cynthiaamitrano8915 why? I mean, don’t knock it til you try it. It’s a really useful shelf stable sauce to have, just like any other jarred sauce, for those days when you either just don’t have the time or the milk to make a bechamel from scratch. I’ve made many, MANY bechamels from scratch but sometimes, as we all do, convenience just wins.

    Benjs lasagna looks bomb i love that the pan fits the whole noodle and has handles! Is it a roasting pan? Why Does 9x12 lasagna pans don't even fit lasagna noodles.😂

    Bechamel is traditional Italian while the use of ricotta is Italian-American.

    I used to make pasta and rice dishes regularly, but not anymore. I still kind of do, but different interpretations of it (replaced by veggies) without the refined carbs, grains, sugars and other inflammatory ingredients since going on Keto and intermittent fasting a few years ago. I treat myself once a week at a restaurant to a non-ketogenic meal, so I don’t feel deprived. Keto-friendly pastas are too expensive, so I don’t buy those. Living vicariously through your cooking video and imagining I’m eating it, but without the consequences. Lol! 😋

    Your cooking of the Béchamel sauce is totally wrong. For 1Cup of milk is a tablespoon spoon flower and I spoon of butter. And you never use cheese in a bachamel sauce. You destroy the taste. It took me years to master in the Béchamel sauce.
