it gets cooked off in the recipes so you are not really consuming alcohol, but the closest i would say is vinegar, just add sugar, or just take it away all together

lol. i made that same mistake when i read "sake". it is not the alcohol kind but the kind you can just buy at a grocery store where they have the asian stuff. it's called MIRIN (japanese sweet rice wine). it's made with alcohol but it's for condiment purposes only.

I looked it up and found this info: You could also use Vinegar. Mirin has a small amount of alcohol. If you're looking for a nonalcoholic substitute, vinegar is a good replacement. Rice wine vinegar offers a similar taste to mirin, but any white wine or distilled white vinegar will work. Use 1 tablespoon vinegar and a 1/2 teaspoon of granulated sugar for every 1 tablespoon of mirin. The type of vinegar you use determines your final product. For example, the vinegar flavor might be more pronounced with distilled vinegar, while it might be more subtle if you use white wine or rice wine vinegars.
If you type in mirin substitute in the youtube search bar a video will come up that shows you how to make a mirin sub. that doesn't involve sake I've used it a few times before I actually found mirin and for the most part tastes the same hope this helps =)

Sara Schultz i've been wondering about this for a while, but the leeks i've been buying at the store don't seem to be the same thing. Japanese leeks tend to be really long and have a lot of white part, where as ours are kind of short and don't have much white part at all.

Sara Schultz Scallion is definitely closet substitution to welsh onion.I can only eat the scallion and the white part of welsh onion - only if you roast them like in this case, the green part is very slimy and pungent that it makes me gag just thinking of it.I used to mistake these two too but once I found a bundle of leeks at one of the imported store and turn out leeks are so freaking expensive ( 2 stalks cost 3 $ crazazyyyy ) whereas welsh onions are fairly cheap

Cooking with alcohol on high temperatures should be ok because the alcohol evaporates very quickly. But yes, a very important reminder!
