    Bún Bò Huế is a spicy beef noodle soup that originated from the city of Huế in Vietnam. This savory bowl of food has a wonderful balance of sweet, salty, spiciness and umani effect. The broth’s main flavors are fish sauce/shrimp paste, lemongrass and paprika. I actually leave the shrimp paste out for each person to add in their individual bowls. Not everyone can handle the pungent earthy flavor and smell of shrimp paste.

    Traditionally, it’s served with beef shank, beef tendon, pork blood pudding, pork meatloaf slices, pork hocks and garnished with fresh herbs! But in today’s busy family lifestyles, each family will use ingredients that they either prefer or are able to pick up at the grocery store. Recently, I've learned that people also add banana blossoms. Which is something I've never had in any of my noodle soups. So it is completely optional what types of toppings you want to serve with your pot of bún bò huế.
    Bún Bò Huế is a special dish for me in particular because my mom and grandma did not make it all the time. It only happen during large family gatherings at Thanksgivings or Christmas and or perhaps a birthday gathering. And sometimes my mom and grandma didn't make it at all.
    ***Note One: Pork blood pudding/gelatin can be found in Asian markets near the meat section or sometimes in the frozen freezer section. Make sure to grab the solid version and not the liquify version or you'll be in for a bloody surprise!
    ***Note Two: If you can't find the bò huế seasoning package, you can mix your own! Combine 2 tablespoons sweet paprika, 1 tablespoon Cheyenne pepper powder, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1 teaspoon ginger powder. Mix well.

    Thank you for this recipe! You explain everything so well and in detail. I so appreciate that. I have been wanting to make this soup on my own and know that it takes many hours the conventional way, but now I know I can do this in a fraction of the time with your help!       Deana Thai it came out so well!! Question, how do you get pass the "sand" that accumulates at the bottom from all the spices ?

      @@ZoeZoeBeans So glad it came out well! I have this sieve looking laddle that I can funnel stuff out. You can also use premade tea bags for loose tea leaves to put spices in to prevent the sandiness. The spice accumulation don't bother me at all. Hope that helps! Thank you for the feedback!

    Where did you buy that pork blood? Is it sold at an American grocery supermarket? By the way it look like gelatin very jiggly lol!

      Asian markets are the only ones I know that sells them. You can find in pork section of the meat aisle or freezer.

    Hi! I plan on making this soon. Will the recipe be ok to use regular paprika? And also, how many tablespoons of palm sugar is that one stick of palm sugar? I have the container of palm sugar instead of the sticks.

      Yes regular paprika is fine. And it's approximately 1/3 to 1/2 cup sugar depending on the saltiness of your broth.

    It looks delicious, but I would omit the sugar though because I don’t like any sweetness in my soup apart from the onion. Where did you get the tendons? Even at Asian markets, I never see any tendons like the ones you used.

    Can I use fresh ginger (finely minced) instead of ginger powder?

      I don't use ginger powder. I always use fresh ginger that I cut in half or slice. So yes absolutely!

      As long as it's not smoked paprika, it is sweet paprika.

    Hi! Where did you buy the pork blood from?

      You can find them in the Asian markets by the butcher's section. Just ask them and they'll direct you. It's hard to find cause it's a tiny little section. And I've found them in the standing freezer section where the frozen meats are too. Best of luck!

    Hi Deanna. How come whey I bought pork blood, it is watery and not as firm/solid as yours? Therefore, I can’t cut it to boil it

      Yes you have to boil it to firm it up.

      All you need to do is reduced the sugar stick by a 1/3 and reduce salt by 1-2 tablespoons.
