Somehow I came across this channel on my UA-cam feed. My mother, who passed away last year, was a huge fan of Christine Cushing. She loved to cook and entertain people. I have never wanted to cook/entertain and always shunned it. I didn’t like the messy kitchen. But during this lockdown, something changed and I’ve been making dinners a couple of times a week. I am so glad I found CC’s UA-cam channel. Now I can make some of her delicious recipes. My mom would be so happy that I finally started cooking after my three kids have all left home!
Been watching her videos on a binge today... (Ok, this was just the third!) But she takes me back to the time of those really charming cooking shows we grew up watching on TV. Classic, simple, unfussy and oh-so-not-about-her (which, of course, only makes you love her more). Please stay the same Christine. We're parched for content like this!

Thanks, I cannot wait to go shopping for my ingredients.. it’s the same anticipation i had last year when I got surplus onions from the fair grounds and made a fantastic onion soup. The BEST part was the 5 cheese blend grilled over the soup. Expensive but SO worth it.

I seen a lot of cooking show on here but you really rocks. A truly American style you always give out here. This was one of the best cheese deal for me. If your refrigerator don't have cheese in it it need to trash or shut off.
Totally agree about the processed cheese vs. real cheese, and of course triangles and not squares 😃 Where I come from (UK) we call them toasted cheese sandwiches but there is also a Welsh version called "Welsh Rarebit" that is a bit more advanced and also very delicious.
Agree with your opinion of processed cheese - it is just as terrible here in Australia and I too thought you were going to use It until you threw it away. I haven't tried using 3 types of cheese on a grilled cheese sandwich, but after watching this, I can't wait!

Very nice, like how you combine several cheese varieties, I'll have to try that next time... I do enjoy a thin slice of tomato (de-seeded, if that's a word), important to place between layers of cheese so the cheese is in contact with both slices of bread and not the tomato or you'll end up with soggy(ish) bread. Best part of a grilled cheese sandwich for me? Those little bits of cheese that ooze or fall out of the sand which and actually scorch a bit on the hot skillet.... I even sometimes grate some gruyere onto a non-stick foil and broil in the toaster oven until brown & bubbly to get that same taste & texture...
I have not made any cheese sandwiches in a long time, but do love them and my grandmother use to make them for us when I was young. You are so correct about the cheese food which pass for regular cheese and I prefer to have the ones made from good cheese. I love your cooking show on PBS: "Confucious was a Foodie" and look forward to where you are going to be visiting next.

That looks so gooey delicious. I make mines with Cheddar and fresh mozzarella, I also put a bit of cheddar on the outside of the bread to get that crispy cheese on the bread. Now I want some :)
Have you ever tried mayonnaise instead of butter? It is much more forgiving just incase you have the stove on too high. I think it is a good idea for newer cooks.

Please share the brand name of your cooktop. Perhaps if I try it out first, I'll be okay with the Miele I'm considering for my kitchen reno! For the record, it's 1:11am and I just got out of bed to replicate your Grilled Cheese (I added a super thin layer of fig jam on one slice before I added the cheese... sssshhhhhhh! Christy Davidson sorry I forgot about induction cooktop. This one was just a makeshift for video purposes. It’s called “ master chef “ and can be plugged into a regular outlet. The main pain with these induction burners is the beeping when you lift pan. I have used Miele but have never owned it to be able to recommend. I hope this helps.

I like my grilled cheese spicy. I have used spiced cheese. Who am I kidding...I put Swiss in it and pile it full of jalapenos. Love grilled cheese cause it is great for those of us who can't cook. Quick...easy..delish.
Thank you for watching . Here are the other 2 cheese varieties that I used in my 3 cheese blend : Gruyere - from Switzerland or France and Beemster from Holland which is similar to Gouda but has way more depth and a rich sweetness that I describe in video. I hope that helps.
If you don't have challah, I would recommend a very light rye without caraway seeds. It will have a more German feel to it but also fantastic. The challah is a sweeter option . I hope this helps and thank you for watching

The inside of the bread doesn't need butter because the cheese provides enough fat ( moisture) and it would just steam and get soggy inside. Also there is plenty of fat so I like to avoid overdoing it .. if that's possible. Thanks for watching
My mother would smack me forward in time to a place where grill cheeses we're long forgotten if she saw me use a metal spatula on nonstick coated pan. I like you so I'm not gonna share the video with her. I am gonna make her some bomb ass grill cheese next time I visit, great vid! Shhhhhhh
Enjoyed the 'joke' with the plastic cheese slice. Really, plastic bears as much resemblance to cheese as processed cheese food. PS I like that you introduce each episode as 'another helping of my favourite foods.' Cute touch.
The anatomy of my GCS is to sprinkle some shredded cheddar and butter in the pan just before placing the sandwich on the cooking surface. Spread sourdough with a very thin layer of mayo on the outside. Shred sharp cheddar and Havarti and set aside some sharp for the pan Shred cold butter into the saved cheese. The mayo protects the bread from getting soggy and loosing it's fluffiness. Medium heat sprinkle some butter/cheddar in the pan, put sammy on top, COVER the pan. DON'T TOUCH!!! Flip after 3 mins onto another sprinkling of butter/cheddar and cover again. 3 minutes later, you will have the crispiest, fluffiest, most diverse textured and flavored GCS possible. Country or egg bread is yummy also if it sounds to rich for you.

I love a recipe video that people would think - "I know how to make that"- no you don't; and thankfully Christine shared all the reasons you have been making it wrong. Processed cheese should be banned, its horrible. Great cheese can be expensive it you can't afford all three just buy one, but buy real cheese, this could be a PSA for real cheese! All the best!

All cheeses are processed, Kraft singles aren't the only American cheese out there. American doesn't break when melted like the cheese in this video (Gruyere should be fine as well). Get a good American like Cooper Sharp American cut thick from a deli and skip the grating and 3 open cheeses to use before going bad.
Processed "cheese" is absolutely vile, and whoever invented it should have been tarred (or Cheez Whizzed) and feathered! Thank you, Christine, for destroying that abomination!
Unfortunately, some people think "American" processed cheese is real cheese! Like the fragmented few that think the US election was fraudulent. They're happy with their orange cheese whiz. Lol!
Process cheese (Velveeta, American Cheese, etc.) is the perfect ingredient for any grilled cheese. Every adult in the world knows that's what makes a grilled cheese, a grilled cheese. So what...you going choose a healthier option? Put cheddar on your pizza one time. It's not the right cheese for it...
Honestly say what you want about the yellow sliced cheese, this is the authentic grilled cheese...and as kids, nothing happened to us in eating this cheese...still prefer it to the very good cheeses..sorry!!

Those are the same cheeses I use. I also add a nice salted slice of huge Rutgers Jersey tomato with the seeds knocked out.

Processed cheese should be banned, its horrible. Great cheese can be expensive it you can't afford all three just buy one, but buy real cheese, this could be a PSA for real cheese!

All cheeses are processed, Kraft singles aren't the only American cheese out there. American doesn't break when melted like the cheese in this video (Gruyere should be fine as well). Get a good American like Cooper Sharp American cut thick from a deli and skip the grating and 3 open cheeses to use before going bad.
Processed "cheese" is absolutely vile, and whoever invented it should have been tarred (or Cheez Whizzed) and feathered! Thank you, Christine, for destroying that abomination!

Process cheese (Velveeta, American Cheese, etc.) is the perfect ingredient for any grilled cheese. Every adult in the world knows that's what makes a grilled cheese, a grilled cheese. So what...you going choose a healthier option? Put cheddar on your pizza one time. It's not the right cheese for it...
Honestly say what you want about the yellow sliced cheese, this is the authentic grilled cheese...and as kids, nothing happened to us in eating this cheese...still prefer it to the very good cheeses..sorry!!
