Well-Ripened Pink Jackfruit 🍈 Creating Kesari & Young Coconut Drink [Traditional Sri Lankan Cooking]

- Today, we explore the wonders of well-ripened pink jackfruit. This is jackfruit season in the village, and my father brought home some ripe ones for the monthly alms. The bright pink jackfruit, with its bright orange bulbs, reminded us of the serene western sky. Cutting the fruit in half released an aroma and taste that captivated us. My father and I couldn't stop enjoying this heavenly fruit, which brought back many pleasant memories.
➡️ I decided to experiment with this magical fruit by making a unique young coconut drink. The juice made from pounding ripe jackfruit bulbs mixed with kurumba water provided a refreshing, milky taste perfect for a hot afternoon. Initially, I thought of preparing Halva with the pink ripe jackfruits but opted for the famous Tamil recipe, Kesariya, inspired by a bottle of semolina. The aroma of cashews and plums fried in ghee filled the kitchen with the scent of traditional Tamil sweets. I added Goji berries and sunflower seeds to enhance the flavor. The boiled jackfruit bulbs, resembling a cluster of dancing Atapethiya, were mixed with sugar cubes and set aside.
I combined hot water, cardamom, and jackfruit jam with semolina fried in ghee. After adding fried cashews, I poured the mixture into aluminum molds, ready to enjoy the next morning since everyone was already satisfied with the ripe jackfruits.
➡️ The next day, my father brought tender jackfruit from a neighboring land. With fresh bread for breakfast, I decided to make a tender jackfruit curry. The tender jackfruit pieces cooked slowly with fresh coconut milk, homemade curry powders, fried ginger, garlic, cardamom, and dried chilies created an aromatic, oily curry that was mouthwateringly delicious. The combination of bread, boiled eggs, my mother's delicious coconut sambol, and the tender jackfruit curry made for a perfect breakfast. මේ සමයට ගං ගොඩැල්ලේ කොස් පොලොස් නම් වරදින්නේ නැත.අතරින් පතර ගහක දෙකක තිබුනොත් මිස වරකා වෙන්නටනම් තවම කල් මදිය.අම්මාගේ කීමට තාත්තා කොස් කඩා තිබුනේ පංසලේ මුර දානෙටය.ඒ අතර ගහේම වරකා වූ ගෙඩි කීපයක්ද විය.කහ පැහැ මදුලු සහිත වරකා ගෙඩියට වඩා තරමක් කුඩා වූ රෝස වරකා ගෙඩියේ මදුලු තද තැඹිලි පැහැතිය.මේ උදැහැනේ වුවත් එය සිත් පහන් කරනා බටහිර අහස සේය.දෙපලු වූ වරකා පලු වලින් පැණි වෑස්සෙන්නේ සිල්ගත් සිත් දැහැන් සුනුවිසුනු කරමිනි.එක හුස්මට මදුලු දෙක තුන කටට වැටී දියවන විට මටත් තාත්තාටත් රස කතා නම් බොහෝය.🍈🍯
කෙලිලොල් අවුරුදු මාසය කවදත් මුරණ්ඩුය.මිදුලට අඩියක් තියන්නට අපහසු තරම් රාස්සිගේ අවුව සැරය.නමුත් ගොයම් කපා වී පාගා අටු කොටු පුරවා අවුරුද්දට ලක ලැහැස්ති වන්නටනම් මේ රාස්සි නැතුවම බැරිය.මේ දොහේ තැඹිලි ගහේ ඇත්තේ ලපටි ගොබලුය.ඊයෙ දවාලේ හොදම කුරුම්බා වල්ලක් බෑවේ මල්ලීය.තාත්තා මල්ලීට බනින්නේ නැති බැවින් මා හට වාසිසහගත එවන් දෑ කරගන්නේ මල්ලීගේ මූලිකත්වයෙන් වන අතර එවිට මා රකින්නේ ගොලු වතකි.🤓 ලී වංගෙඩියෙහි දමා කොටාගත් වරකා ඉස්ම කුරුම්බා වතුර සමග මිශ්‍ර වී ගෙනෙන්නේ වෙනස්ම රසයකි.ඒ අතර හැපෙන කුඩා කුරුම්බා කැබලි වලින් දැනෙන්නේ නැවුම් වරකා රසයට නොදෙවෙනි වූ කිරි රසයකි.ගිනියම් මද්දහනට මෙයනම් අපූරු පානයකි.🍹
ගිතෙල් මුසු වී බැදෙන කජු ,වියලි මිදි සුවදින් මතකය ඇදී යන්නේ දමිල ගැමි ගෙවලින් නික්මෙන රසකැවිලි සුවදටය.සූකිරි කැට තුන හතරක් සමග වරකා මදුලු වැහෙන්නට වතුර දමා පැයක් පමණ ලිපේ තබා හැදිගෑ පසු තැම්බුනු වරකා මදුලු පෙනෙන්නේ අටපෙතියා මල් අහුරක් පැණි වතුරේ නටන ලෙසටය.🌼🍂
ඒ අතර ගිතෙල් වලින් බැදගත් රුලං වලට උණුවතුර එනසාල් සහ සකසාගත් වරකා ජෑම් මිශ්‍රණය එක්කොට කලවම් කරගත යුතුය.බැදගත් කජු එක්කොට ඇලුමිනියම් අච්චු වලට දමා හරි පිට පෙරලාගත් පසු ඇත්තේ රස විදින්නටය..එහෙත් එය පහුවදාට තියාගත්තේ උදේ සිට මේ වනතුරුම වරකා එපාවන තරමට ගෙදර අය වරකා ගෙඩි දෙකකටම වගකියා තිබූ හෙයිනි.
පහුවදා උදෑසන තාත්තා පොලොස් කඩාගෙනැවිත් තිබූනේ එහා ඉඩමෙන්ය.උදේ කෑමට පාන් තිබූ බැවින් ඉක්මනින් පොලොස් ගෙඩියක් කපා ලිප තැබුවේ කවුරුත් කැමති නිසාය.වියලි මිරිස් ගලේ අඹරා,එනසාල් කරාබුනැටි ඉඟුරු සුදුලූණු තෙලෙන් බැද ගෙදරම කොටාගත් පහේ වර්ග දමා යහමින් මිටි කිරි එකතුකර අඩුගින්දරේ හින්දගත්විට පොලොස් ඇඹුලෙහි රසය මෙතෙකැයි කිව නොහැකිය.🥘 පොලොස් කෑලි අතරින් බුබුලු දමා තෙල් පෑදෙන විට කටට කෙල උනන්නේ උල්පතකින් වතුර උනන ලෙසටය.
පාන් ගෙනවිත් තිබුනේ බාප්පලාගේ බේකරියෙන්ය.මීට අවුරුදු පහලොවකට පමණ පෙර ආ පාන් සුවද අදටත් එලෙසමය.පාසැල් නිමා වී පැමිණ බත් කෑ සැනින් අප දෙදෙනා දුවන්නේ තේ කෑල්ල මැද්දෙන් බේකරියටය.දර පෝරණුව තුල දැවී ලී මේසය මත ගිමන් හරින රෝස් පාන්,සීනි සම්බල් පාන්,මාලු පාන්,කිඹුලා බනිස්,වන්ඩු කේක් සුවද පුංචි අපිට දැනෙන්නේ අපිව ඩැහැගන්නට පැමිණෙන යෝධ සුවදක් ලෙසය.ඉස්සසර ගම්වල චූං පාන් තිබූනේ නැත.පොඩි එවුන් පුදුම කරන එක එක 🍪🍰🥟🥪🍞කෑම ජාති තිබුනේ පරණ පුට් බයිසිකලයක පිටුපස රදවාගත් පෙට්ටියේ රබර් පටියකින් ගැටගැසූ ඉටිකොලය යටය.අපටනම් ඊට කාසි උවමනා නැත.බාප්පාගේ පිහිටෙන් තිබෙන්නේ ඇති තරම් කන්නටය.විටෙක බාසුන්නැහැ සීයා අලුත් අලුත් කෑම අත්හදා බලන්නට ගොස් ඒවා නිශ්පලවීමේ වාසියද අපටය.😁 එදා මෙන්ම අදටත් මල්ලීනම් එවන් අවස්ථාවන් මගහරින්නේම නැත.😬
මා සැකසූ පොලෙස් ඇඹුල සමග අම්මාගේ රසම රස පොල් සම්බෝලයත් තැම්බූ බිත්තරත් පාන් කන්නට තව තවත් ආස කරවන සුසංයෝගයක් විය.ගමේ රස ගමේ ලෙසම විදගන්නට ලැබීමත් එක්තරා ලෙසකින් අපි සිව්දෙනා එකට කල පිනක ඵලයක්මය..😍🙏🏽

I never know that so many dishes could be made with jackfruit. I only know to eat it as a ripe fruit, and cook it as a curry green. Your coconut water and jackfruit juice looks amazingly delicious. From Singapore 🇸🇬: Fantastic cooking clip as usual..good calm music to go with it as well. I do like the cooked jackfruit seeds in my gravy!!!...yes..but it was not commonly sold before..now it's offered in some shops..Also the unripe jackfruit Curry.. with coconut milk..or "Kurma"...when overseas, i used to be able to get canned green jackfruit, from Vietnam...but now it's a delicacy as it's touted as food thats like a substitute for meat because of its texture!!.. Also...wow!..I saw the granite "AMMI KAL" as we call it!!.the grinder for spices and coconut usually to get a wet spice paste...not seen now a days in houses after electrical grinders came into use..but still the taste of stone ground spices and flour tastes a lot better!!...I wish I can eat your cooked food!!..maybe you should have an Airbnb in your village for city dwellers to spend a few days in your village enjotibg the ambience and enjoy the healthy food etc!!..a retreat and rejuvenation option!!...so will you open a bed and break fast place at your village ??!!...😊 hope so!!

You can cook it with coconut milk along with other fruits like ripe plantains and sweet potatoes and cassava and taro and add the tapioca pearls n sugar. It’s so good ! We call it ginataan in the Philippines! ❤❤❤

Everytime I visit Kerala I wonder how beautiful the place is and how tasty the jackfruit is. I have seen gigantic trees with atleast 50 ripe jackfruits in one tree. How I miss jackfruit 🥰🥰🥰

Love from Tripura India 🇮🇳🙏....we use seseme oil (sorisha tel)in our hands while opening jackfruit... because of oil stickyness don't bother us anymore it becomes easy to extract the fruit....in Bengali we called it jacket fruit(kathal )😄i love ripe jack fruit we make juice & eat it with roasted rice(muri), & also eat unripe kathal & make it curry & seeds are very amazing to eat ♥️ Jack fruits is a fiberious fruits that's why it taste like Swastik meat (niramish bhojan)veg but jackfruit curry tastes like meat ...i personally enjoy to eat i,t season is coming soon in May (jostho mash)the jake fruit will Ripe & other fruits also mango 🥭😋

Huge similarity between Sri Lanka and Kerala due to the geological similarity and thousands years of human interaction between two areas. Both Kerala and Sri lankan people ( specially Sinhalese ) has facial similarities maybe due to mixed in ancient times.
