- Nigerian stew is a thick, hearty and delicious stew made with Fresh Tomatoes, Red bell peppers, Onions, and Ginger. It’s spiced and seasoned with Ginger, Curry powder, thyme, Salt, and Pepper. In this recipe, I did something a little different from the traditional.

Seems you added tin tomato paste? Or just fresh tomatoes

You're not frying it so why did you put grandnut oil inside
This stew wasn't made by immersing the tomato pepper mix into oil and frying it. The tomato pepper mix was thoroughly boiled, then a small amount of oil was added, along with the dried meats, to complete the cooking process. Frying a stew requires a LOT more oil than does this process. Some folks look for healthier ways to cook, and this is an option.
