- How to make the best African Chicken Stew! This chicken tomato stew is so flavorful due to the herbs and spices used. Growing up in Cameroon, this was a staple on our Christmas table. It is the stew to make for the holidays, weekends or special occasions.
African Chicken Stew is often eaten over white rice but you can eat it with pasta too. Also, serving with sweet fried plantains just takes this meal over the top! Hope you enjoy, friends!

INGREDIENTS FOR AFRICAN CHICKEN STEW
5 pound chicken (I used a whole "hard" chicken) about 2.5kg
1 large onion (chopped and divided into 3)
2 inches ginger root, peeled
10 garlic cloves, peeled
4 sprigs basil
6 sprigs parsley
1 stem celery
1/2 teaspoon white pepper, divided
3 Maggi seasoning cubes (4g), substitute with three teaspoons chicken bouillon powder (divided)
1 teaspoon salt
6 large Roma tomatoes
6 oz tomato paste (170g)
1 cup vegetable oil (250ml)
1 teaspoon curry powder

Washing your chicken simply spreads salmonella all over your sink and kitchen, it is very dangerous to wash your chicken and it achieves absolutely nothing that cooking alone does not achieve.

I’ve been going on a “food journey”, I have tried more traditional Mediterranean, Chinese, Korean, Japanese, and Mexican. I think I’m going to try my hand at West African food for the first time with this dish!!

Now I understand what you mean by "Hard Chicken", its what a lot of the world calls a "fowl" ie, a chicken that was kept to lay eggs for many years, as opposed to a chicken raised in a very short time for meat only.

But the hard chicken in Kenya we call them kienyeji meaning a hen that is a tradition chicken with no substance that makes them to grow up fast. the traditional hen takes months for it to be eaten. Coz it grows slowly.
in UK we call them 'stewing hens' since the meat is tough they are best stewed or braised

My friend is from Sierra Leone and makes hers almost exactly Like this she just adds bell peppers and bay leaves and then serves it over jollof rice! So excited to try your recipe!

Looks delicious! In Singapore we have a similar tomato chicken dish (not a stew though) called ayam masak merah, or chicken in spicy tomato sauce. It's excellent with rice.

The sauce turned out fairly thin because I used regular chicken (because I could not find hen in the store I was at); and the chicken was already falling apart quite early so I didn't have time to reduce it as much. (Also I'm impatient)
Lol. I was wondering how to convert the recipe for regular chicken… glad it was still good
@@PaperMario64 if you're less impatient than me; you can probably just take the chicken out as soon as it's tender and broil it until sufficiently grilled; and then just let it wait on a plate until the sauce is reduced more.
You could have taken the chicken out and cooked the stew till it reduces

I made this today. It was delicious! I definatly added way too much water to my chicken though and had too much broth. I wasn't about to dump it though. I had a lot of sauce which is where all the flavor was so extra sauce for me! Thank you!!

Also, keep washing and cleaning your chicken & meats. If you know how to clean your surfaces after handling...there is no need to worry about salmonella. We and those before us have cleaned hundreds of pounds of meat and have NEVER gotten food poisoning.

The aroma from african dishes are just different. The use of tomato is so different. The time i attended a Nigerian ceremony ( i cant remember the cause) in my University in Malaysia, the food tasted so different. I loved it. I wish i could try some more.

Made this tonite and turned out great, I added a teaspoon of sugar to balance out the acid from the tomatoes. Will add this recipe to my stable recipes

This is very much like the chicken stew a Nigerian friend often cooks but instead of basil she always adds thyme instead. She also takes the chicken off the bone so the pieces of chicken mix in with the sauce, and then she serves it with a vegetarian fried rice. Lovely and a dish I will be making as winter approaches.

I am an Afghan American and this looks just like my mom’s stew :) the recipe is very similar to Indian and Afghani stew. Oh and I also have African DNA just like everyone in the world and I love African people ❤️
