What I know is that if you strain the watery part of the egg when you crack it open with a fine mesh sift you don't get the stringy parts that cloud the water. It should not taste like vinager it should be diluted in the water half tablespoon at most in two liters of water plus the salt.

You can poach any egg, doesnt have to be fresh. Of course, dont poach a rotten egg, but yknow.
The vinegar is not to firm it up, although that might be part of it. The vinegar is when you’re boiling it, cuz you can boil it an egg is a flexible thing, sometimes the protein in the egg whites will create foam at the edges of the pot. The vinegar just stops that from happening.

Eggs do not have to be fresh, put the egg in a strainer and let the water drain and into the hot water.
In the UK and Europe eggs are not refrigerated,
So Americans let your egg be room temperature.
PS : a splash of vinegar holds the egg together, with no vinegar taste.

I just did it. Drop the egg into a sieve first. Roll it around till all the loose white drips through. That way, when you cook the egg the water will be totally clean after, no straggly bits. And the egg will be perfectly formed in a lovely shape. It totally makes the difference. No bubbles in the water. Table salt and pepper at the ready. Drop onto a ready buttered crumpet. Personally l like a trace of vineger, you can barely taste it anyway.
