A workaround for those using custom keymaps is to add the eyedropper to your quick favorites, then press "q" while hovering above the color strip. You'll still have one extra click to select "eyedropper," but it still is much less pointing and clicking than when accessing it normally.

Yeah get you. On the other hand it allows for a lot of personal flexibility of how you want things to work behind blender. Just whish there would be a safe these settings for future files other than the safe to starting file
The "E" key only works when using the Blender key map, thus only mentioning this shortcut key is of limited usefulness for some users. When you use the "Industry Compatible" key map (as I do, coming from Maya/ Modo), the key to activate the eyedropper tool is "I". Why there isn't simply a button for this in the UI is beyond me though.
Yes Blender shortcuts work in mysteries ways! But there is a way of creating new shortcuts that dont exist! But it is fairly complicated and advanced. Maybe time to do a new video about that!
+1 read the parent comment, future frustrated person googling this issue. You have to use the exact "Blender" keymap, not any other, including your own custom keymaps, for the "e" key to work.
