    Finally made the cake though it is almost a year later than I originally planned on making it. It has multiple steps but instructions are easy enough to follow. Just keep in mind that it is time consuming because the sponge cake needs to be made ahead of time because it needs to be left out overnight to dry up a bit. This makes the sponge cake easier to handle because it is drier. Also, since it is drier it can absorb more of the sugar wet syrup which in turn keeps the cake more moist. Use your judgment. You may not need all the sugar wet syrup. You don't want your cake too wet where it will fall apart. But you want enough for the flavor component. Also, you can make all the sugar wet syrup ahead of time. You can also make the custards ahead of time too. Therefore, on the second day all you would need to do us assemble the cake. Also, don't use too wide of a cake pan. Use your judgment and try to visualize and figure out if the pan you use is small or big enough to hold 4 layers of cake once cut so each layer won't be top thin.
    I used a springform pan and after
    It was baked I could only get 2 layers out if it. So it was too big of a pan to use for this recipe. I used Italian 00 Flour but if you can't find it then yet all purpose flour instead. I also didn't have a vanilla bean so I used 1 table of vanilla extract. The cake was delicious.

    Thank you for answering . Can I use the liquid that is in the jar of maraschino cherries instead of the alchermes. They dont carry it in my local liquor store. Or would you recommend a different liquor as a substitute? I will make this cake for my son's birthday in the middle of March and I am in the process of gathering all my ingredients.

    Its name "zuppa inglese", meaning "English soup", is becouse it can remind the "English trifle". No dark wine inside but the Roman liquor "alchermes" anyway.

    Is the rice starch same as rice flour or can we use cornstarch instead?

      Yes, is the rice flour. You can use cornstarch, it just slightly changes the gelling temperature of the cream.

    Is the 00 flour the tipo 00 Italian fine flour or cake flour?

      Hi lily, 00 flour is all purpose flour. You can use a cake flour.

      Ok, thank you because I do have the Italian 00 flour at home by ANNA NAPOLETANA, FARINA GRANO TENERO. or stick with cake flour.

      @@lilyleung2237 Hi, ok, I think it's fine. It's definitely not an Italian flour because I don't know it and it has a rather strange name (no one would call a flour Anna Napoletana, it's like calling a hamburger Joe Texano). Anyway, what matters is that the recipe comes out well and you like it. Let me know what you think.

      The Napoletana Anna flour is like Antimo Caputo Italian 00 flour. But if you know cake flour will work than I will use that instead. What is the protein content of your flour? Cake flour is around 8/ 9 percent. All purpose is around 11 percent. Thank you.
