    you have cocoa beans seeds for growing , if have what's price of seeds . can we grow at 20 to 50 degree c temperature.

    I'm in the Dom. Republic and wonder if the humidity and warm weather are causing my wonky tempering problems? I've only made 9 batches but can't seem to hit the mark. The choc tastes great but no snap yet. I ordered some silk from your company. Maybe seeding is the only way for this climate. What do you think? I've watched and taken notes on ALL your videos. You helped my husband and I years ago. Good to see the series on chocolate making. We are ready to go for it:)

    How are commercial choclate makers tempering thier choclate?

      There is no one answer here. The most common is probably seed and a tempering machine. Of course some hand temper, some use silk, some have continuous tempering systems. What size commercial chocolate makers are you referring to?

      The medum scale ones ..who are making and selling 30-40 kgs of choclate bars each day
