I’m a Godiva girl!! Milk chocolate is my favorite! My husband however loves dark chocolate! Like really dark lol but my house is a dairy free zone due to my son being allergic to dairy! So I buy the enjoy life semi sweet chocolate and it’s not too bad actually! I just melted some down to make chocolate covered strawberries for him!
I went to culinary school, in the baking department we did weeks of chocolate and NONE of the chef instructors or textbooks explained tempering as well as you just did. I frickin love you.
Let that be a lesson to ya! You learn tons more outside of school if you search for knowledge relentlessly. Finding it on your own is much more rewarding

And people refrain from using basic decent vocabulary because they don’t want to go through the trouble of actually explaining what words mean

Doing a tv series requires way more, in so many ways, including working with all the other people involved, etc. I personally prefer UA-camrs stay here, and keep that vlog style, real life something that very polished tv series loose, unless they work at keeping it. A bit more freedom, a bit more interactive. But ultimately, each person choose as it fits into their life, what works for them.

According to some studies, it's actually beneficial for infants to acquire language. Speaking with full, grammatical sentences is beneficial, too :)

@@bodyofhope They actually didn't make chocolate bars. They grounded it up and mixed it with water and spices as a drink. Chocolate was for the longest part of its history consumed as a beverage. The first chocolate bar was made in the middle of the 19th century.

In the book paddington was in a toy store at a mall, but no one ever wanted to buy him bc he had a missing button, so one day he snuck out of the toy store to explore the mall. He found a store that sells comforters I believe, and he decided to take one of the buttons off of one of the comforters (after rolling around on the fluffy bed like a cutie)😭) then he got adopted. I have no idea why I remember this book in such detail because I havent read it since I was a small child, but this is the story I always knew so when I saw the paddington movies I was confused at first😭

I actually appreciate hearing that things didn’t turn out exactly like a commercially produced chocolate bar. For those of us who care about the process it’s nice to know where things can be improved and what techniques worked well and what didn’t.
The husk, or shell of the cacao beans makes an AMAZING ice tea. Prepare as you would any loose tea, sweeten it, add a squeeze of lime and chill. Its sooo good. The nibs are also a great source of protein. They taste great in granola or trail mix.

This brings back memories, I grew up eating these Cocoa pods; we had a bunch in our yard. The kids would eat the fruit, then the bean would be collected in a wooden basket to dry in the sun so it'll be ready to be made into homemade chocolates

It's crazy that a chocolate bar doesn't cost $50 considering how far it has to travel and the long process it goes through, same with coffee. Somewhere along the line there's people getting royaly screwed over, hint... it's not the manufacturers!
This is the honest truth. There's a reason why some nations and small countries are still living in 3rd world conditions while they work every day. It's no stretch of the imagination to see that cheap chocolate comes from human beings working for third world pay. That being said, I'll be damned if I don't love a good snickers bar
Yeah some people are getting screwed over but considering how much is done by machines I'm not surprised chocolate is cheap now. What sends chills down my spine is what likely happened to people in the past for products like this.
@@Quickblood1 The mechanical portion of chocolate making comes further down the line. But the farming, collection, fermenting and packaging is all still done by hand. It's a tedious process, and the people that do the jobs are certainly paid very little for us to have chocolate confections for little money.
@@alysia2046 The cheaper bars use vegetable oil and hydrogenated vegetable fat as a bulking agent, along with lots of corn syrup. The higher quality chocolate doesn't use bulking agents, but it's still sourced from third world working conditions regardless. The only chocolate that can claim to at least /try/ to combat this issue would be the "Fair Trade" chocolate, and those aren't as readily available as the usual options.
Please try to make a video about Bak Kwa! It's a type of Chinese 'jerky' that is tender and sweet instead of the American dry version. I tried making it recently, and boy was it good.

It's also possible to temper chocolate by adding "seed" pieces of tempered chocolate as it is reaching the beta crystal formation temp. I've had success tempering this way.
Emmy! I read that tempered chocolate sets at room temp (solid and you can pick it up), but it doesn't fully set for another day. My chocolate always tends to be better the next day.

As a child, I remember cooking with my dad and I loved it. Your sons are so lucky because I think the foodlove and the cooking love should be related for everyone. I love cooking on these days and all because my dad introduce me to it since I was may be 3 or 4 I've seen all my friends cooking "for survival", but if you like cooking the possibilities are endless

And unfortunately, slave labor is used in a lot of cacao bean farming, which is all done near the equator in extremely hot locations.

This brings back memories, I grew up eating these Cocoa pods; we had a bunch in our yard. The kids would eat the fruit, then the bean would be collected in a wooden basket to dry in the sun so it'll be ready to be made into homemade chocolates

It's crazy that a chocolate bar doesn't cost $50 considering how far it has to travel and the long process it goes through, same with coffee. Somewhere along the line there's people getting royaly screwed over, hint... it's not the manufacturers!
This is the honest truth. There's a reason why some nations and small countries are still living in 3rd world conditions while they work every day. It's no stretch of the imagination to see that cheap chocolate comes from human beings working for third world pay.

Yeah some people are getting screwed over but considering how much is done by machines I'm not surprised chocolate is cheap now. What sends chills down my spine is what likely happened to people in the past for products like this.
@@Quickblood1 The mechanical portion of chocolate making comes further down the line. But the farming, collection, fermenting and packaging is all still done by hand. It's a tedious process, and the people that do the jobs are certainly paid very little for us to have chocolate confections for little money.
I'm also sure most chocolate bars have a lot additives which makes a small amount of cacao go a long way
@@alysia2046 The cheaper bars use vegetable oil and hydrogenated vegetable fat as a bulking agent, along with lots of corn syrup. The higher quality chocolate doesn't use bulking agents, but it's still sourced from third world working conditions regardless. The only chocolate that can claim to at least /try/ to combat this issue would be the "Fair Trade" chocolate, and those aren't as readily available as the usual options.
Please try to make a video about Bak Kwa! It's a type of Chinese 'jerky' that is tender and sweet instead of the American dry version. I tried making it recently, and boy was it good.

It's also possible to temper chocolate by adding "seed" pieces of tempered chocolate as it is reaching the beta crystal formation temp. I've had success tempering this way.

Emmy! I read that tempered chocolate sets at room temp (solid and you can pick it up), but it doesn't fully set for another day. My chocolate always tends to be better the next day.

I never watched your videos before, i don't even cook, but your pronunciation, color of your voice and your enthusiasm make the most soothing sound i have ever heard.
As a child, I remember cooking with my dad and I loved it. Your sons are so lucky because I think the foodlove and the cooking love should be related for everyone. I love cooking on these days and all because my dad introduce me to it since I was may be 3 or 4
