      I have an idea. We actually banned this woman in my apartment complex from ever bringing food to a potluck again because of what she made. It tasted overwhelmingly of alcohol. Like if someone tried to cook some dish with alcohol but had no idea what they were doing and saturated it. Here's the thing though: There wasn't any alcohol in it at all.

    I will never understand these strange recipes and their fixation on mayonnaise

    • @melissadeleon1997
      @melissadeleon1997 6 років тому +46

      Snudder Mado Alot of these recipes came from the 50’s when there was alot of war going on and not alot of food to go around. Mayo was the easiest most accessible ingredient to use to people tried to stretch it as much as possible to feed their families.

    • @mchobbit2951
      @mchobbit2951 5 років тому +51

      I think you are confusing the 50s with the 40s. There was plenty of food in the 50s, it was the 40s, during the war, when there was a lack of food.

    • @jic1
      @jic1 5 років тому +38

      @@mchobbit2951 Yeah, I think the mayo thing in the 50s was part convenience (you have your egg and oil in one! The stuff will keep for months or years in an unopened jar!), and part that a lot of these recipes came from promotional cookbooks from companies that made mayonnaise. In the case of the particular recipe, I think it was probably to cut the sweetness of the ice cream a little to make it blend a little better with the rest of the salad. Obviously there were plenty of poor people in the '50s who had to stretch out everything to make ends meet, but not enough to be a defining aspect of the food culture of the time (unlike, say, during the great depression). An exception would apply for any recipe that originated in the UK, where food rationing continued into the mid-50s.

    • @diane9247
      @diane9247 5 років тому +18

      jic - Yes. Loads of these recipes are the result of big-budget mass marketing by the post-war prepared and processed food companies. American manufacturing of all kinds was cranking up full blast, so making stuff & selling it was top priority. They all put out cookbooks and advertised in ladies' magazines and TV. Fortunately, my mom wasn't interested in them - except for lime jello-cottage cheese-pineapple salad. (Yep, we LOVED it.) You can find a lot of the original TV ads on UA-cam.

    • @ewajackowska4115
      @ewajackowska4115 5 років тому +12

      Amy mentioned it once, after the war there was a boom for processed food and producers were pushing recipes with a lot of unnecessary processed ingredients to convinced Americans to those new foods. Kinda funny when you think about it, especially nowadays, when most of us try so badly to avoid it

    Emmy I found this thing called Aquafaba in many videos online. It is chickpea water. It can be whipped like whipped cream or egg whites. You can make crunchy merange cookies or use it to replace eggs in recipes. You can use it to add air into recipes where you need things to be airy and fluffy. Maybe you can try making something with it.

    • @TotteNesh
      @TotteNesh 6 років тому +19

      Yeah, just know that there's two different kinds of it. Most non-ecological canned chickpeas comes with salt in the aquafaba (just means "water" and "beans"), and making something sweet with that can be a bit of a struggle. But, there's canned chickpeas without salt as well (mostly ecological). THAT is what you use for baking. The stuff with salt in it is of course good if you're using it for things like mayo where salt is a part of the recipe. You can actually use the water from most beans, but it taste less "beany" from chickpeas.

      It looks like it would be fun to make and experiment with. If you put some chocolate in with it and maybe less cream cheese or tofu cheese or what have you, you could make mousse or a pie. You could use it to add air to bread or cake maybe, to make it fluffy. It might be good in fluffy pancakes.

    I’m an 8th generation Floridian, grew up in the cattle industry. We have swamp cabbage often, we cut our own from the land, tree has to be in a certain size range, then we get down to the heart of the cabbage tree and cut it up to bite size pieces, we simply boil in water with salt pepper and some bacon for flavor and have it as a side dish. Some folks add more to the cabbage but where we’re at it has a great sweet flavor by itself and the bacon grease always helps. You can also make fried cabbage fritters and they’re great too. Real old time traditional Florida food. 🤠
    But yeah this recipe was extra weird lol

As someone who has two parents who are not from the US, growing up I'd hear friends say we had so&so salads for dinner (like chicken salad etc) & I'd think that sounds so delicious...then I later found out that "salad" in that sense is just another word for mayonnaise & I realized I'm not missing anything lol.

In Civil War days the hearts of palm were fresh harvested from the nearby growing young palmetto palms native to Cedar Key, The green food coloring is to make it look cool and refreshing. So hot during that era without air conditioning. I ate the wonderful salad at a Cesar Key restaurant thirty years ago. Sounds strange, but lovely on a hot day. You are delightful. In my country Costa Rica it is very common to eat hearts of palm in salads. We also eat it in some caserole dishes, lasagna, pizza, pies... and it is very easy to find it fresh as well, and it doesn’t really have a flavor, but the texture is completely different, a lot woodier and tough, so normally we eat it in a preparation called “picadillo” which is basically a bunch of vegetables chopped very tiny and some kind of ground meat

    I have had this salad at the restaurant that started it. Individually everything tastes good, but the combo is horrific! I have no idea why it lasted more than a week, much less 40-50 something years. At the restaurant they don't use PB ice cream, they use pistachio ice cream. That's why it's green. The ice cream there is great, but putting lettuce with it was just weird. No idea if they put any mayo in it or not.

  • @DAFoxFL
    @DAFoxFL Рік тому

    I live in Florida and ate this at a restaurant in Cedar Key (that has since burned down and not rebuilt). I remember the ice cream as pistachio and it was much softer than you served. as it melted it became sort of the dressing. I also don't remember the peaches - could have been another fruit but definitely the hearts of palm. Technically, swamp cabbage is cooked with smoked sausage or bacon while these hearts are canned or pickled, so different taste and texture. It was an unusual dish but likely a good tourist draw. Something you could not get anywhere else!

    A popular snack every so often in our house is a banana split down the middle and cut into four pieces. You flip the inside of the banana facedown and smear the outside with a little peanut butter and a dab of miracle whip. It sounds crazy but the sweet of the peanut butter and the tangy of the miracle whip goes really well together. My mom and her mom and my uncle all eat it the same way. I’ll never forget the horror on my dads moms face when I requested this snack as a child and she thought I was seriously joking around with her lol but it’s still one of my favorite ways to eat a banana.
    Another thing our family has always made was what they called German Grits. You take bulk ground pork and boil it then strain it out of the water. Then boil barley in the same water until it’s soft and all the water is cooked out. Then take the pork and mix a little salt and thyme in it to taste and mix it in with the barley and cook them together until it is thickened. When it’s done we like to spread it on toast with a little jam. My friend loves the way I make it but prefers it without the toast. There are different kinds of German Grits. This one is closest to something called stippgrütze.
