bree baker it was made by the wives of cattle ranchers so they probably had a lot of leftover beef that they didn’t want to go to waste

Something like this goes way back, all the way to the days of King Henry VIII. It was some sort of Meat Pie (Beef) called a "Chuet." It was sweet. It included Dates, Prunes, Raisins, and Currants.

I have tasted chocolate fudge with bacon and it is *glorious.* I have also had _peanut butter fudge with bacon_ and is too good for words, far superior to the plain chocolate fudge with bacon. I should mention I hate peanut butter... so to someone who loves peanut butter it would be orgasmic.

I really want to know what people were thinking back in the 50's and 60's. They're recipes for food, were, to put it nicely, very very odd.
Afaik a lot of the truly bizarre recipes came from cookbooks issued by companies like Campbell's or Jello. All of the recipes would include whichever ingredient they were trying to sell and that resulting in some very questionable recipes.
Limited grocery variety + creative cook = weird food :)
I was born in the 50’s. My parents lived during WW 2 and looking back, I think living through the Great Depression and the War has an affect on all parts of their lives. Especially food and wasting absolutely nothing. They both worked at good jobs. I was made a member of the “clean plate society”. Which meant I was not allowed to leave anything on my plate. And always heard about “starving kids in China”. Now, when I see kids throw away food, I cringe. Why do people put sooo much food on their plate, and end up trashing what they don’t eat?
You say that, but novaday all Americans seem to eat is like 90% corn syrup.
Larg04 corn syrup isn’t as bad as you make it out to be, and more Americans are also adapting healthier diets
I'm not gonna lie, I was a bit reluctant at first, but hearing Emmy describe things really helps to change perspective. Might just give this a try 😄👍

It looked like a good recipe for fudge until the beef happened. I should send you the recipe I found for cookies with cheddar cheese that I'm too afraid to try.

Okay, here's the recipe, now that I'm on my PC. (I can't remember exactly where I got it, but it was some kind of cheese-themed cookbook my husband got at a charity shop in Scotland.)
2/3 cup (160 ml) finely chopped dates
½ cup (120 ml) brown sugar
¼ cup (60 ml) water
1 cup (240 ml) chocolate chips
1 cup (240 ml) softened butter or margarine
½ pound (227 grams) grated sharp cheddar cheese
2 ¾ cups (660 ml) all purpose flour
Combine dates, sugar and water in a saucepan and cook over low heat until dates are tender (about 10 minutes). Cool and stir in chocolate chips.
Cream together butter and cheese, and mix in flour. Chill dough 1 hour.
Roll dough thinly and cut out circles with cookie or biscuit cutter. Then top half of the circles with the date and chocolate filling and put an empty cookie round on top. Press edges together with a fork. Bake on ungreased baking sheets at 350F (180C) for 15 minutes. Makes about 4 dozen, which seems like a lot.
Dates and cheese go together very well. Dates and chocolate go together very well. The only thing that concerns me with that recipe is chocolate + cheese.

Quick tip, if I may: when making fudge (and other confections) - after the sugar had melted - do not stir it until it reaches the desired temperature. Stirring it can cause the sugar to crystallise prematurely. Even more so - you can take a brush, wet it with water and brush the edges of the pan to remove sugar crystals.
And "beating until firm" -- well -- after a few minutes of mixing the entire thing (quite hard), sugar crystals will form, the mixture will get a different shine, and the whole thing will crystallise and become quite firm. This is what gives fudge its distinctive texture. If done correctly - it should be really really smooth, with no little sugar crystals inside.
How about a bacon version. Or even better a candied bacon version!

Emmy the soft ball stage is (according to every cookbook I have that mentions it...) 234°. In the case of fudge, if you don't get there you often end up with goop. If you overshoot you end up with hard candy (goop you can fix by revoking to the correct temp, hard candy you're stuck with, so to speak...) btw, been making fudge for 50 years...

A thermo-stabilized pouch would probably give it some extra lifespan though.

One of my great-grandmothers was a farm girl from Czechoslovakia and she came to the United States sometime in the early 1900's and she and her husband bought another farm once they got here. They didn't waste ANYTHING. Stale coffee was added to beef gravy because one simply did not throw anything away, and I imagine this recipe was born of that mentality. I can imagine great-Grandma Antonia making something like this for an after dinner treat for her large family to use up leftovers that would go bad if not eaten right away.

@ROCCO Pazzo Whether you can afford drugs or not, wasted food is wasted food. A lot of people with disposable income keep their financial status because they know where to cut corners.
You'd probably have to be high to think of this, since it's just easier to throw the leftover beef in _literally anything else._ And let's remember that this recipe is from '67.

I saw a version of "beef fudge" made with (from raw) hamburger in the "South Dakota CowBelles Beef Favorites" cookbook of 1971-1972. I have also seen rather a lot of candy recipes from the Central Plains that substituted beef tallow for butter. What stands out to me if that the recipes almost always call for canned milk, so I am guessing dairy cows were in short supply.

a friend of mine would make fudge using the giant ass velveeta brick. The first, and only, time that I tasted it it did taste like fudge but it had an odd finish that I couldn't place because it was not in the right context. Then, when I was told that it was velveeta fudge all I could taste was chocolate and cheese. Considering that a store that sells the velveeta bricks also has everything else needed to make proper fudge, or even a box mix, why.....WHY would anyone make velveeta fudge?!? Yet, people do for some reason.
mjs28s because poor people used to get huge bricks of velveeta cheese free (along with giant cans of govt peanut butter, pudding, powdered milk, etc). These recipes came about during war time, when butter and sugar were not easy to come by and wouldn’t be wasted on fudge. Red velvet cake came about for the same reason-you could use beets and canned tomato soup to make it, and not use precious sugar and butter.

Well there's this thing my mom loves I forget what they're called and I always thought it was just some weird hispanic thing my family does.. but they are these empanadas filled with sweet, slightly dry beef inside them sort of like candied beef? I love to mix Beef Jerky with chocolate bars.
Take a piece of the beef then a piece of chocolate put them in your mouth and chew it's very good.
You can still taste the beef.
I'm sure if you dip beef in melted chocolate it would be very good. Beef and chocolate go good together. : )

I used to work in a nursing home in activities. We would cook every week. One of the recipes that the residents really liked was Velveeta fudge. It mostly tasted like fudge. It had a weird texture and tasted very processed as one might expect. It was easy to make as you only use the microwave.
