the other day my friend and I stumbled across a Xi'an place in NYC and the food was DELICIOUS. I was on a budget so I only got a tofu soup dish and it was still amazing. my friend got noodles and they were hand pulled and sooo good. it was a little annoying to get to from my apartment but we're planning to go back today!

There are def homemade tastes that go back to childhood and you'll remember them forever. For me it's my g-gma's chicken and dumplins. We have the recipe but its written in old school recipe format (2 handfuls of this, pinch of this, mix till it looks right). We've been trying to replicate it for years.
We have similar issues with my grandmother's amazing classic recipes. We even use her post and pans for her recipes. Ingredients are written and measured in "half egg shells and pinches and fist fulls. These recipes were handed down from her grandmother. We've all grown up eating these in our family so we all know how they taste when done right. Somehow she always pulled it off perfectly. My twin brother gets a perfect batch about 50% of the time. Anyway, I'm still losing my mind on these Asian recipes!
Sounds like you both need to do some research, involving make them over and over to find the exact measurements. Lul sound like that is the kind of science experiment that I can get behind.

I moved away from the San Gabriel Valley to another state many years ago. Today I would not move, there is so much good food in the San Gabriel Valley now thanks to the booming Asian population.
That gelatinous starchy soup with the meat balls reminds me of hot and sour soup I can get locally in West Virginia. It's spicy and fermented and thick and slippery. It's soooooo good!
