I'm from 西安 as well and I loveeeee ur videos. It reminds me about home every time when I hear you speak mandarin with a bit of the xian dialect. Pepper soup is my favourite food and vinegar complete my life. Got u fam.

I stayed in Xi’an for 6 weeks a few years back and have craved the food so much ever since I left. This video got my mouth watering and brought back so many memories. Thank you! I hope to enjoy Xi’an cuisine again some day

the other day my friend and I stumbled across a Xi'an place in NYC and the food was DELICIOUS. I was on a budget so I only got a tofu soup dish and it was still amazing. my friend got noodles and they were hand pulled and sooo good. it was a little annoying to get to from my apartment but we're planning to go back today!

After eating that much chilly believe me he cannot put on weight. Chilly is making ur metabolism faster and he is eating a lot of chilly..
There are def homemade tastes that go back to childhood and you'll remember them forever. For me it's my g-gma's chicken and dumplins. We have the recipe but its written in old school recipe format (2 handfuls of this, pinch of this, mix till it looks right). We've been trying to replicate it for years.

We have similar issues with my grandmother's amazing classic recipes. We even use her post and pans for her recipes. Ingredients are written and measured in "half egg shells and pinches and fist fulls. These recipes were handed down from her grandmother. We've all grown up eating these in our family so we all know how they taste when done right. Somehow she always pulled it off perfectly. My twin brother gets a perfect batch about 50% of the time. Anyway, I'm still losing my mind on these Asian recipes!
Sounds like you both need to do some research, involving make them over and over to find the exact measurements. Lul sound like that is the kind of science experiment that I can get behind.

西安 Xi’an fellow man in London sends regards to you, those look really authentic, my wife and me been watching your programs for several months, just found out you are from Xi’an, well done! mate. My wife said it is amazing that you made an English girl who can’t take chili but being convinced it is such a happy taste, love seeing you enjoying spicy cuisine, not just Chinese, but the whole world diverse food.
This touches my soul. Remembered flavors of childhood are the best. I’d give anything to have my grandmas fried chicken just one more time.
