    I have one of those 60 ml gaiwans, but I fibd it to not retain enough heat to extract the flavour of tea so it is good for jade oolong, baozhong, or those green new dancongs but not good for high roasted or aged oolong, for those it is better to use 100 ml and above size yixing to retain heat, it can make a huge difference, nowdays I drink a lot of roasted oolongs, in winter time it is more warming than green tea.

    How will the quantity of tea affect the brew? If I put more, can I do more steepings or will the brew be just stronger tasting without any effect on the amount of brews?
    Keep up with the videos, we need more of such high quality content!

      Boris .Martin Hi Boris. Ideally you want to go with the vessel being full of tea once it's expanded, so for rolled Oolong, 1/3 full of dry leaf and straight about 2/3. But as Zhen demonstrated in the video, if you have less leaf, you'll have to wait longer and you'll get slightly fewer infusions. Conversely, if you go with more leaf, your infusions will be shorter and you'll likely get more infusions. You want to be careful though, if you put too much, you won't be able to get your tea out before it's too strong! You pretty much have three parameters to play with. water temperature, leaf amount and steep time, experiment with these and have fun!

    Your first steeping was exactly 35 seconds ;-) I'm always amazed at how wrong we get the time intervals, it's not just you, it everyone. It seems that we believe we can estimate time, but we're completely off. I use a stopwatch or I count, it's worth doing it, especially if you're having guest over - you don't want to give them bitter tea and make them not want to try it ever again.

      The thing is if you are watching the liquor colour, it doesn't matter if you guessed the time properly, the tea will be good. The advantage to this method is you can adapt to different batches of the same tea. They won't all require the same time. You will also be able to adjust to small differences in water temperature from one sitting to the next. The disadvantage is that you might guess way off during a video shoot! ;)

    This seems so tedious. Can't I just leave it in a teapot for 3 minutes then drink? Is there really much of a difference?

      Teapots are great too! For the really awesome teas, there is a huge difference, but there's nothing wrong with brewing up a delicious pot of tea. We do it all the time. 😉

      3 minutes will make it quite "bitter" (depending on the amout of tea). For good Oolongs I would really recommend Gong Fu style.
