Thank you Louise for the easy step by step instructions. My Mom rocked the veggie beef soup and I have been trying to duplicate her recipe for years. Two years after my Mom’s passing I had a bad cold and found the last quart of her veggie beef soup at the bottom of my chest freezer. It was like a long overdue/desperately missed hug. I just came as close as ever to duplicating her recipe. Did I mention THANK YOU? ❤️. Today in Boston we are enjoying below zero temperatures but the instant pot has warmed us from the inside out!
I made this two days ago. It was amazing! It is surprising how much broth is made by all the veggies. I used more short ribs for a richer flavor. This will be a go-to meal from now on!
I made your beef and veggies soup/stew yesterday as it filled the Ninja Foodi and it was gone in a few hours as it was eaten for lunch and dinner. Your idea about the broth I think was the key as it packed a lot of flavor of beef. Yes I did the 30 min, 5 minutes and 2 minutes under pressure as my 3 year old could not get enough carrots. It was so nice to see and the taste was out of this world. Thank you for sharing and I will do it again next week and vlog it. Best and warmest regards
😋This soup is superb, Louise - I don't even want to call it soup!! Thank you so much for your great videos and suggestions. Next time I make this it will be even easier because now I know exactly what it takes. Super easy and super delish!!
I have just subscribed! I just loved watching you and your explanations. I also just bought a Ninja Foodi and all tips and tricks are more than welcome!! Thank you, MJ from Belgium
Your awesome plus plus, love watching you cook. Looks so delicious too. Thanks for sharing. I love, love Liberty..I listen for him every show. You should show pictures of him. Use to have chickens, roosters, ducks and geese growing up. Oh the country life..
Just wanted to say Thank You Louise for all the time you take trying out all of the recipes so the rest of us don’t have to try until we accomplish perfection. Even tho I don’t always make your recipes it definitely helps me when I want to create my own or adapt some others. I bought my Ninja food I after watching your videos. Since I live in Spain I wasn’t able to use your referral so I thought at least I’d thank you for your helpful recommendations.
As per normal. Another addicting recipe to put into the culinary arsenal. YUM! Oh, I totally agree about the ox tails. Boobalah and I were so looking forward to ox tail soup. We got over that in a hurry.
Louise the dish looks great you do not need to taste it the colours are enough this is going to be on my tablethis week, Louise could you use shin beef with the bone in to start the broth stay safe ATB
I think you could use shin beef, but you might want to increase the PC time to 1 hour so it breaks down enough and tenderizes. If it's a big enough piece, you can cube it up and just use that as the beef for the soup.
I'm sure you could do it in the slow cooker, but it's going to take quite a bit longer. I would probably brown both types of meat, add in the rest of the ingredients (except the froze veggies) and cook on high for 8 hours. Then add in the frozen veggies and go another hour.
Im a little guy that love this instructions ! But i need a few as youre making me fat just looking ! Ima tell you again ?! Your husband going to be mad when i ask you to marry me for your receipes ?! 😆 Much love !!!
I haven't thought about that before, but that is a good idea! It would thicken the soup some, but I always hate throwing them out! I'll try it next time I make it.
I was wondering what to use my short ribs for, this year I had the butcher leave some out I usually include them in my ground beef. DO you have any other recipes for Short ribs?
Will try this! A vid suggestion: Tons health nuts on YT are obsessed with bone broth. Most say 3 hours (!!!) under pressure with bones to get that congealed stuff that's supposed to make it healthy. I suspect you could put your science/cooking brain to use and let us know if that's necessary. xoxo
I did 90 minutes with a full natural release for a turkey bone broth and added a touch of vinegar and it was gelled perfectly. That being said, it won't hurt a thing to go 3 hours either. The most important thing is having the right amount of liquid for the bones you have. I tried skimping on that once and ended up with a flavorless watery broth.
you have saved my marriage....he got me a ninja foodi and it might as well have been an iron skillet, i was angry for months and every time i tried to use it there would be much cussing and many tears from the kitchen, he would offer to help and then all hell would break lose. Then i found you. I love your recipes and your style and you are so beautiful. I imagine you get very many marriage proposals but it seems your man is a perfect fit. Thank You! Both!!
Yes! That is exactly what I did with my watery soup and it was yummy. I'm going to work on a beef and barley soup soon. I can't remember how long I PC'd it because I was trying to salvage a disaster. LOL
There are some foods, like lean meats, that do better with a longer release to keep the moisture in the meat. With large pots of soups, a longer release will help prevent sputtering of food from the valve.
Yes, absolutely. Just keep in mind that raw cabbage will give off liquid when cooked, so you might need to thicken more at the end. I would think 1-2 cups would be plenty.
Sorry but you can't make vegetable beef soup without red wine. You lose out on way too much of a flavor profile. Also a good alternative to short ribs would be pot roast.
I'm not sure what you mean because all the recipe links are in the video descriptions. I had to fix this one because I forgot the potatoes, but it's posted now: thesaltedpepper.com/vegetable-beef-soup/ You can find all of my written recipes on my website: thesaltedpepper.com

Ox tail is best smoked for a long time ,,omg then a tangy beef style homemade bbq sauce baked beans and Cole slaw,,, mmmm
As per normal. Another addicting recipe to put into the culinary arsenal. YUM! Oh, I totally agree about the ox tails. Boobalah and I were so looking forward to ox tail soup. We got over that in a hurry.
I've had some oxtails that were amazing, but this last package was simply frustrating! I hope you both enjoy the soup!
Looks Marvelous Louise! Yum.....will be making this recipe too.
Hope you enjoy it!
My Ninja Foodie will be here tomorrow! You were my inspiration for buying it. Can’t wait to try your recipes.
Yay! Thank you and I hope you love your new Foodi and the recipes!
Ok, I'm making it now. I was lazy and air fried the short ribs for 30minutes. I proceeded with the rest of the recipe after that. Thank You again.

Will this work in the slow cooker? Awesome video thanks for sharing. Stay well and safe.

LOL!
Best comment ever, lol.
Great recipe! The only thing that would make it over the top for me would be to add some Barley.
I actually added some barley to the one test batch that came out so liquidy. It was wonderful. You'd have to increase the liquid for sure.
Good morning from Michigan
Morning!
Do you ever consider putting the vegetables you used to start the broth into a blender and adding the liquid vegetables back in at the end?
I haven't thought about that before, but that is a good idea! It would thicken the soup some, but I always hate throwing them out! I'll try it next time I make it.
Making this for dinner. Coulnd not find beef shrt ribs, so i used all stew meat. Used what I had.
I'm going to be making this tomorrow night and can I use Beef Stir Fry, for my chopped meat to add at the end?
Yes, absolutely!
I was wondering what to use my short ribs for, this year I had the butcher leave some out I usually include them in my ground beef. DO you have any other recipes for Short ribs?
Not yet because they are. hard for me to find, but I hope to in the future.
My hubby raved about it and I thought it was good however next time all short ribs
How would I go about making this a beef, vegetable, and barley soup?
I did that with one of my tests, but I can't remember the PC time for barley. You have to increase the liquid by at least 1 cup.
Will try this! A vid suggestion: Tons health nuts on YT are obsessed with bone broth. Most say 3 hours (!!!) under pressure with bones to get that congealed stuff that's supposed to make it healthy. I suspect you could put your science/cooking brain to use and let us know if that's necessary. xoxo

Thank you so much! I'm so glad the recipes are helping! I'm very lucky that I married my best friend, he is wonderful.
Could this receipe be djusted to add barley and thus have beef barley soup?
Yes! That is exactly what I did with my watery soup and it was yummy. I'm going to work on a beef and barley soup soon. I can't remember how long I PC'd it because I was trying to salvage a disaster. LOL
What’s the benefit of short release as opposed to a long release
There are some foods, like lean meats, that do better with a longer release to keep the moisture in the meat. With large pots of soups, a longer release will help prevent sputtering of food from the valve.
When I select 'sear/saute' the display changes to 'COVER' after a short time....is this normal? Do I need to close the lid?
You should not need a lid with sear/sauté and I've never heard of that error message before. I would call Ninja on that one.
Ok thanks... I'll do that.
Could you add green cabbage to the recipe? If so, how much would I add?
Yes, absolutely. Just keep in mind that raw cabbage will give off liquid when cooked, so you might need to thicken more at the end. I would think 1-2 cups would be plenty.
Why didn’t you sauté the beef cubes just like you sautéed the meat for the broth ?
Good question! I guess I didn't think about it before pouring in the stock, but you certainly can do that.
How does the pot know there’s something stuck to the bottom, is it that clever?
It’s temperature sensors I’m sure.
@@TheSaltedPepper Thanks Louise. Louise have you ever used a Thermomix, that’s something else I’m looking at trying. Cheers
Can you go away for a long time after it’s done?
If you aren't going to eat it for a while, I'd switch to keep warm.
So maybe you can rename it "Vegetable Beef Souperb" ??
Love this! LOL
its not va-doll-ea its pronounce vie-DAY-lea onion. we grow them here in georgia.
Thanks!

Kittens N Claw Machines I disagree 100%. I love using red wine in beef stew, but absolutely never in beef soup. 😊
almost impossible to find recipes on this site..........gave up.......moving on. sorry
