I have never cooked barley. I am glad you showed the package. I made chicken soup the other day and added LARGE elbow noodles. Those stupid noodles swelled up and almost over took the whole kitchen! Then they started to go mushy. I hand picked out every single noodle and threw them in the garbage! The soup turned out okay, but if I never see another elbow noodle again, it will be okay with me. I will try your barley soup, it looks delicious.💕

I cut my beef in larger chucks, brown the beef coated in flour with the vegetables on medium high, then add the stock with bay leaves and seasoning and tomato paste. Then simmer for at least 2.5 hours, it all cooks, and then add the barley and simmer for 40+ minutes. Beef is always fall apart tender. I omit the potatoes and corn because with the barley that’s 3 carbs in one meal, husband is diabetic. We prefer ours as a thick stew instead of soup, so I add 2 cups of barley.
I just made a great veggie beef soup, using stew meat..it was ok, but I decided thst the next pot of soup would be made with a good chuck roast. Sure, it costs more, but I thunk the better flavor is worth the cost. I simmer my veggie soup for longer thsn hour.. The interesting thung about a goid veggie soup, is thst the flavor actually developed over time, mine was best the third day. Served it to my friends the second day, abd they loved it. ❤

Small hint, freeze your barley in pkg. for 48 hrs. before making your stew, soups. All grains and flours. If,, you don't want to see mealy bugs doing the side stroke or back stroke in your dish !

I agree with you about the garlic. I do not like the taste it gives things when you fry it with the onions etc. Much better if you add it to the liquid.
Just wondering, why don’t people ever put cabbage in their veggie soups? My Mom always put cabbage, peas, corn, green beans, carrots, potatoes, diced tomatoes, and onions. Cabbage makes it taste fantastic.
I discovered, by accident, after making soup for a decade, that canned, cubed taters stay in tact ,even after reheating. I know, I still used fresh taters ,but sometimes I toss in a can of rinsed off taters great compromise
