Ingredients:
For the Tart Shell:
- 1 pre-baked tart shell (9-inch) (You can use a store-bought shell or make your favourite pastry dough and pre-bake it until it's golden.)
For the Filling:
- 2 tablespoons butter / olive oil
- 1 medium onion, thinly sliced
- 2 cups cabbage, thinly sliced
- 1 large potato, thinly sliced (about 1/4 inch thick)
- Salt and pepper, to taste
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 cup shredded cheese (such as Gruyère, cheddar, or a combination of your favorites)
- 2 large eggs
- 1 cup heavy cream
- A pinch of nutmeg (optional)
serve with anything you like, chips, beans.......

@@BackyardChef I made the red lentil shepherds pie early this week... (in our air fryer). It was MASSIVE.. we ate it with side veggies, stored some in the freezer as a meal to take in our campervan and had a half portion (with some other leftovers) for lunch today. Really solid tasty recipe. This pie and the Rumbedthumps interest me... gonna try one of them next. As someone who (with my wife) have gone 'very largely' Pescatarian I appreciate recipe ideas that are veggie and achieveable - gives me inspiration. Thanks Rik!

Your making me hungry!! That looks AMAZING! I love anything with cabbage! Last August I had the pleasure of visiting Ireland for the first time and I fell in love with Ireland and actually didn't want to come back to the US. I'm hoping to visit Scotland eventually. I have always loved baked beans but here in the States we never had them for breakfast. Well I can tell you I had them for almost every breakfast while I was in Ireland and they have become a staple now in my breakfast. I did try the oatmeal as well and it is heavenly compared to ours. I brought a few packs of Flahavans to bring back with me and wish I would have bought more as it is soooo expensive here. Night and day compared to our oatmeal... I am so glad I found your channel!! I am definitely going to be making several of your recipes. My ancestors came over from Ireland, Scotland and Wales so I am thrilled to be learning more about the recipes from those Countries. It makes me feel connected to them in some strange way!

Yes, I like it but I think I'd prefer mash potatoes and yes it does sound like potato overload but I love potatoes. I think that I'd keep the cabbage as a side dish too and just put onions, garlic potatoes and cheese in. Perfect, thank you!

It’s been a bad season for the humble cabbage so the prices are definitely ridiculous. The prices on all groceries have skyrocketed in the last few years, the only thing which hasn’t changed is pork and that’s possibly because more and more Australians are Muslim and don’t eat it. Capsicum is regularly about $12/kg and you see good beef at $60/kg

I’m sitting watching your video and I’ve not eaten all day. I am actually drooling lol.
I love pastry but I’m overweight and my doctor is protesting🙄. Sometimes to save on fat and calories, I will use a flour tortilla or more than one, to line the flan case. It’s not as nice as pastry but it is a good healthy substitute. I think I’m going to try this pie in the wrap case. I love the idea of it as cabbage is a huge favourite of mine. Hi Rik, instead of dried thyme could you use some crushed fennel seeds and some caraway seeds go well with cabbage? Maybe deglazed with a little dry sherry or white wine or white vermouth just to add an layer of flavour? I would add a leek to as cheesy leeks are delicious 🎉😂😂

Love the idea of this pie being served with the beans. Not so sure about the chips! I came to Canada from South Shields 63 years ago. One of the dishes me Mam and Gran did was Ham and Egg Pie. I don't know if it was regional or something standard throughout North East England but I've never encountered anyone in Canada familiar with it. Whenever I explain it, people always want to put cheese in it and I have to explain it is NOT a quiche! Thankfully, my wife makes it for me the way I remember it. ( Cold, it makes for a great lunch with a glass of beer!) Rik, it's pretty basic but if you are aware of it, it would be a worthwhile idea for on of your videos.
