- Nicola Fanetti and Ursula Waltermath run the modern Italian restaurant Brace in the heart of Copenhagen. Inspired by the New Nordic movement, specifically the time spent working at Noma and rediscovering his love for foraging and connecting with the nature, chef Fanetti decided to stay in Denmark and combine the Nordic influence with his Italian roots. His menu features neither pizza nor a lot of pasta, but all dishes point back to his motherland in some way or another. To the time spent at his grandparents' farm as a kid, where he first learned how to cook and fell in love with food and Italian cuisine.

Seeing this from Italy i'd Say this Is a smart and well done representation of some of our flavours. I would say they will get better, because they have the right style and foundation and a lot of tradition from which to choose inspiration
I'm sure they'll be happy to hear that from a fellow countryman! Btw this chef just won chef of the year in a cooking competition on Iceland.
So much creativity from this chef using ingredients I've never heard of .if somebody could open a great Nordic place like this in Los Angeles it would be full every night .
There are some Nordic inspired restaurants in L.A. now, although I have now tried myself - Auburn is one of them.

I am greatly inspired by your work, sir. Each time you upload a new video, it is much better than the previous one. In general, the way you approach to highlight a restaurant and its concept, the camera angles, the background music all combined makes a brilliant video. Lukas Adamsson that’s because it’s a Nordic-Italian restaurant. Flavors are more Italian. Presentation is more Nordic.
