    Basmati and jasmine rice are long grain rices, although they have a bit more of a distinct flavor than the generic long grain white rice you find at grocery stores. You mentioned a "starchy" rice though, which all long grain rices have similar starch content. Short grain rice is very starchy though.
    As for the rice that is traditionally used, the generic long grain white rice is that. On the other hand, basmati and jasmine rice will work just fine, and the difference in flavor isn't enough to worry yourself too much about it. I would not use a short or medium grain rice though, since those have way too much starch, short and medium grain rice tends to be much more expensive, and it will likely not have the right texture.
    In the end though, all types of rice will taste good, even brown rice, believe it or not.

      You do can use evaporated but the condensed add the sweet flavor

    What does it should taste like, because i was buying horchata in spain and it was milky with liiiiiiiiiiiittle sour taste,it was delicious but when I'm doing it at home with recipes it's always tastes almost like milk maybe little more like condensed milk, there's never rice taste,maybe i need more rice-water and less milky stuff?

      I believe because it is made slightly differently in Spain. In Spain they use a nut called "tiger nut" instead of rice, which is commonly used in the Americas.
