2:51 Naw if you look closely at just about any scene that gives a good view of the inside to the narrow gauge engines' cabs in all of their appearances throughout the HiT era, it's easy to notice that there's no drivers in them whatsoever. Even though the standard gauge engines were most certainly under their own control throughout the entirety of this era, they at least had drivers present and acknowledged some of the time. In all fairness though, I don't mind the engines having control over themselves as that was a problem that even the first few seasons had where the drivers weren't fully in control of them, and it does better excuse the narrow gauge engines' stupid decisions throughout this series. However, even if they're not questioning what their engines are doing most of the time, I do prefer it for when the drivers are present. The only exceptions I can give to this rule are most of the road vehicles like Kevin and the pack, the sentient cranes, and probably Diesel 10.
For your question regarding rolling stock made to transport ice cream, there are refrigerated boxcars/vans built to carry perishable items like fruit, meat, etc., so ice cream being transported by train isn't really one of those far-fetched ideas the writers from that era came up with. What's strange about ice cream being transported in the Thomas & Friends show is they have ice cream vans shown in episodes before, such as "Too Hot for Thomas". I know the modelers have never made ice cream vans for the narrow gauge engines, but still, they would've use refrigerated vans instead of flatbeds to carry the ice cream.
