How to make Chickpea and Chorizo Stew in 8 minutes (or less)

  • I often find that when I'm exhausted after a day working down the pit, a quick and easy dinner recipe is best - which is why I came up with a tasty, meaty, super quick and easy meal that can be made in minutes. It's not exactly what generations of my coal mining family used to eat back in the good old days but it still does the job. Even if it has 'fancy' ingredients in it. Enjoy!
    Chickpea and Chorizo stew recipe (Serves 2)
    2 chorizo sausages (not the cured kind, the sausagey kind)
    200-250g chickpeas or other beans or pulses (1 standard sized tin)
    1 standard sized tin of chopped tomatoes
    1 medium onion (Err on the smallish side of medium here)
    3 cloves garlic
    1 heaped tsp tomato ketchup
    Half a tsp salt (plus a pinch more to suit your preference)
    Quarter tsp pepper
    Half a tsp dried oregano
    1 tsp dried basil
    1 level tsp chilli flakes (optional)
    Stock or water as needed

    Nowt wrong with that, I used to do a similar tea with a tin of corned beef year's ago 😂😂

    Garbanzos con chorizo, an old poorish folk's dish in Spain. There are a number of Spanish bean/lentil dishes with various forms of pork added, often chorizo+pork belly+morcilla (black pudding), all the way up to the veritable feast which is Cocido Madrileno, it not only contains those 3 types of pork and chickpeas but also potatoes, carrots, cabbage, chicken and beef, as well as soup noodles, and is eaten as 3 courses.
    In the Spanish Civil War when food was not plentiful, the Republican troops were given chickpeas and chorizo, plus a shot of brandy, the night before they went over the top.

    Oh hell yeah, I love chorizo.
    Here in Colorado where there's a robust Hispanic population, house-made fresh chorizo is everywhere in a staggering variety of "secret" family recipes, and most of it wonderful. Most often it comes just bulk, by the pound, without any casing.
    Makes a great quick breakfast/lunch too, fried then rolled up in a hot tortilla with scrambled eggs, some onion and damn near any kind of leftovers - diced cooked spuds if there's any lurking in the fridge, a bit of grated cheddar, a smear of refried beans, a dollop of sour cream, maybe a jalapeño - you get the idea.
    Now I'm hungry, dammit.
