- Buckwheat Brownies| Gluten Free, Vegan, Refined Sugar-Free!
INGREDIENTS (17cm square pan)
*1cup=240ml, 1Tbsp=15ml
*No Substitution Unless Specified.
[Dry]
• 180g buckwheat flour (or oat flour if buckwheat is not your cup of tea)
• 50g (1/2cup) cacao powder (or cocoa powder)
• 170g (1 cup) coconut sugar (adjust to taste)
• 1 Tbsp ground flaxseed (sub applesauce)
• 2 tsp baking powder
• Pinch sea salt
[Wet]
• 220ml plant milk
• 120ml (½ cup) neutral oil (we used light olive oil)
• 1 tsp vanilla extract
• Dark chocolate chips for topping (optional)
INSTRUCTIONS
1. In a large bowl, add the dry ingredients and combine well.
2. Add the wet ingredients to the bowl. Combine well.
3. Pour the batter into a lined baking pan with parchment paper. Smooth it out.
4. Sprinkle with chocolate chips. (optional)
5. Bake at 170˚C/338˚F for 18-22 minutes, and let it cool for at least 10 minutes before removing from the pan.
6. Let it cool completely.
7. Cut into squares, and enjoy!
8. The brownies can be kept at room temperature for 2-3 days. Store in a container in the fridge for up to 7 days. Freezer friendly as well.

Hi, I tried your recipe and loved the filling ❤
Unfortunatly, the dough for the crust ended up way too wet (and I really stuck to your measurements). After adjusting I managed to get a consitency, to form the crust. To use metric measurements might help, to make it more acurate (and for me, scales are much more accurate than cups)...
Anyway: next time I will try this recipe, making the crust with a more neutral flour (most of my guests put the crust aside, because of it's intense taste 😕).

I personally love the unique flavour of buckwheat but do understand it isn’t not everyone’s cup of tea. You can definitely make it with other flours such as oat flour etc.

Can I add water instead of milk?
Made it yesterday! I used just half a cup of coconut sugar and it still turned out great. Also i used applesauce as i read heating flax/chia makes them toxic. For me the brownies are a bit crumbly, i wonder if its the sugar or the applesauce
