You should try this on pre 1.16 versions. It should theoretically be possible, because obsidian spawns in fortresses and you should be able to get iron and flint to light the portal. Wood and food will be an issue so you might have to eat rotten flesh. If you ever need a weapon, you could always kill either skeletons for their stone swords or get golden swords from the chests.

Certainly an interesting idea, but too grindy in my opinion since you're just hunting for fortress chest RNG.
