    - 250g ground almond
    - 130g icing sugar
    - 30g wheat flour
    - 50ml aquafaba
    - 1 tsp lemon juice
    - 1 tsp vanilla extract
    - 1 tbsp Amaretto liqueur (or any other)
    - Granulated sugar & icing sugar (for coating)

    For a gluten free version I replaced the wheat flour by cassava flour. I baked it double time to get a caramelized bottom. Amazing taste! Thanks a lot!

    Can I use almond extract if I don’t have liquor? Also I don’t have lemon can I use apple cider vinegar ?

      Hi Dani! Yes, you can substitute the liquor, although that’s the ingredient that gives name to the cookies.
      Also you can try with apple cider vinegar instead of lemon.

    Nicely made. Do you recomend any sugar substitutes that will give similar results?

      Thank you Peter! Maybe agave or maple syrup but you might need to increase dry ingredients if the dough is too soft.
