Basic Bread with Thermomix

  • Make your own Bread with Thermomix with only a few ingredients:
    Step 1. 350g water + 2tsp dry yeast into mixing bowl
    2min / speed 2
    Step 2. 1tsp salt + 500g bead flour
    2min / dough function
    Step 3. Let it rise for 1 hour. Pre-heat oven to 450F
    Step 4. After dough has risen, transfer to a bread pan
    Step 5. Pop in the oven 450F for 1h
    Slice and eat :)

    Thank you bought one of the steamers and followed your recipe,bread is wonderful and crispy husband loves it,shall be making it frequently.Cooked at 260c for 35min on middle shelf came out nice and crunchy crust.

    Thank you Marta. Have been making bread in the thermomix for awhile now but your bread is so easy and much better for an artisan type loaf. With some added garlic, oregano and rosemary, I don't need to buy 'special' bread anymore. Mine does take two hours to rise to the top of the bowl but it's the weather I live in. Thank you for sharing. Have you ever made a bigger Loaf and if so can you share the recipe please?

      I love the silicone pan too bake it and it only takes that much or maybe 20% bigger. You can start by doing double all ingredients and using a bigger bread pan.

    Btw.... you should let him to make it self while supervising him. He is REALY on the age he could do it, and it is good for him to learn even if he do not make it all the time

    Beautiful bread, it tasted amazing! and it took only 35 min to cook for me. The crust wasn't very hard so I might leave it longer next time :)

    Thanks very much! I loved this recipe. I've got a nice result with 40 min in the oven, next time I'll decrease the temperature to have a thinner crust.

    Just tried the recipe with our new silicone bread bowl (arrived today.) Very easy, but came out slightly burned on the bottom with 1hr at 450. Will try 425 next time or reduce time. Bread was delicious.

      Yes. Depending on your oven you may need to adjust time and temperature. Did you find the best combination for your bread?

      @@MartaSereno Thanks, we are working with 50 minutes at 400 in a bread bowl. Maybe not as crunchy as yours, but works for our everyday use and is a better replacement for sliced bread, We also start the oven right after the knead and prove the dough on the heat. We get a better rise that way.
      We also make a variation with 1/4 cup of extra virgin olive oil and 1/2 tsp powdered Rosemary (we're in USA) added with dry ingredients. This version is softer because of the oil but it is delicious. I usually line the pan with olive oil and a sprinkle of Rosemary instead of the white flour used in your recipe.

      Hello Martha. Thanks for the demo and recipe sharing. Tried today. So excited. Bread turned out looking good. But, the base (crust) was hard (not as crispy as yours). Can u possibly tell me the reason ?

      @@zaitonsulaiman6308 so happy I inspired you to try it. The texture of the bread can differ depending if you knead it by hand or the type of appliance you use as well as your oven type. I confess I'm not an expert cook. But I am great at following instructions and finding the best tools to help me get what i want and be the cook i aspire to be. For this bread i use the thermomix and the silicone bread pan. I'm on vacation in Portugal right now but will be back in New York the first week of August to create more content for this channel. I'm happy to connect with you then to help you get the texture you are looking for in your bread. Thank you for watching.

Just sharing my love for Thermomix (works without Thermomix too just takes a lot more work and makes a mess in the kitchen :))

    Followed your recipe to the letter. Oven temp 230C for 1 hour. Ended up with brownish black, hard crust. Bread itself was alright. What has been the issue and how to I get a softer crust ? Otherwise, the whole process was fairly trouble free, except for trying to get the dough off from a mixing bowl I used separately for the dough to rise. Advice appreciated.

      Try 200C for 45 mins. Hot temp = harder crust. To remove the dough easier, turn bowl upside down and twist the blade from the bottom. Any residue left under the blades after removing the bulk of it, just hit the turbo mode for 1 or 2 secs.

    Hi, I have TM6, I have the silicone bread pan as yours, but I didn't have a good recipe - till now :) Thank you for sharing. I also have a question - how many fresh yeasts do you think I should use, as these are what I usually use.

      I believe the reason is 1:2 dry to fresh yeast. 1 tsp of dry yeast is 7g so try 14g of fresh yeast. Let me know how it comes out.

    I dont understand the baking time.
    I bake every second day, pretty much the same recipe but with egg and olive oil and some milk. Oven at 200 and the bread will be done in 15-20mins.
    Why is this at 260 and 45minutes?

      I'm guessing because you add egg milk and olive oil so it's not exactly the same since you are using different ingredients. I also make milk bread and it cooks for only 25 minutes. The exact reason why that is I do not know. Let me know if you find out.

    Hi Marta, thank you for your amazing video. My problem is that I've tried it twice and both times the bread had come out incredibly hard and extremely dense. Can you advise me what I'm doing wrong. I am determined to stick to this recipe because it seems so simple and easy to follow.

      Hello Jay. Try cooking for 40 minutes only. Ovens are all very different. So are people’s preferences fir hardness of the bread. Read the comments on the video for inspiration as many other people shared what worked for them in terms of cooking time and temperature according to their preferences.     Hi Marta thought I'd try and mix for six minutes to see if it would give me different texture,had to stop during mix as stated to sound like blades stuck any advice as I've read you can knead for six minutes.

      You can absolutely knead for 6 minutes. Suggest you follow a diferent recipe like pao de água from Portuguese recipe platform Cookidoo. Thermomix has no issues kneading for 6 minutes.

    Hi Martha, I am from the Netherlands/Europe and I have recently bought a Lékué breadpan, but I am not sure if my breadpan is even big as yours. How much capacity does your pan have?

      Ideal for 500g of flour. Works with 750g but i don't close it. Get a rounder loaf.

      Temperature of the room could be an issue or the yeast could be "dead". Get a new packet on instant dry yeast and make sure the lid stays on when proofing the dough.

    Marta, you are not using sugar (to activate the yeast) at all, or you forgot to mention it? Just asking…

      No need to add sugar when you use instant dry yeast.

      Instant yeast does not require sugar to work properly. However, yeast does feed off of sugar, and mixing in an extra ½ tsp of sugar or honey can help speed up the proofing process.But it’s not necessary to use it at all

      @@MartaSereno i actually did 450 tonight too while I was doing your recipe. Which is great it come out perfect. 5 minutes left in the bake I was ready the box that silicon thing came in and started panicking. Still ate the bread tho lol

      Yest loves cozy warm temperatures to rise the dough. Use whatever container you want to raise the dough, just make sure it's covered to avoid a "breeze" and that the room is no colder than 20C. The warmer the room, the faster it grows. Use packets of instant dry yeast kept in the fridge. if you store yeast outside the fridge it expires.

      Bake at any temp between 200C and 220C. Really depends on the oven.

      I tried this last week. Followed Martha's directions (let it proof in the Thermomix). I had to wait a bit longer for it to proof (around 2 hours) because it was a colder day and I didn't have a heater going. The bread turned out really well. I tried it a second time and let it proof in a bowl instead, and then put it in the fridge overnight, took it out in the morning at let to return to room temperature before baking. It was even better, so this is how I have been doing it now.

      @@Himmelblausyd yes. you can put the bowl in a closed space like a cupboard or microwave (off) or oven (off). Room temp should be no less than 20C. Bacteria (yeast) needs cozy temp to act.

      The measurements are correct. I just made the dough and it is perfect. I used a regular scale because the one of my Thermomix is not working correctly. Maybe your scale is off too.

      I trust the brand claims. It's really a personal option. Been using it and cooking bread every week for over 10 years. We are all still alive and well :)

    Problem with standard American foods like bread white flour, sugar, dairy and so on, makes you fat and risk for diabetes, high blood or cancer. Go vegetarian and you will save the 1.500 dollars and 60 dollars yearly fee to get access to the cookbook.

    Sorry, no, the Thermo-fucking-mix is shit for making bread. A huge PITA to clean afterwards. Overrated piece of garbage. Got one, hated it.

      chill bruh. dont leave it out and let it dry. maybe if you had an iota of patience or two neurons to use the self-cleaning option you wouldnt be bitching on other peoples channels.

    I’ve made this bread so many time. Thank you so much. I’ve heard you can with some bread leave them to proof over night can you do that with this one?

      As long as the recipe doesn't have anything that can spoil like milk or eggs, you can reduce the yeast to 1/4 teaspoon and it will take all night to do the first rise. Then you can follow the rest of the instructions.
