  • Perfect bites of different textures and flavors - this meringue dessert will impress your family and guests. You can prepare everything up to two days in advance and assemble right before serving.
    Makes 18-20 mini bite-size Pavlovas
    2 Egg Whites (35-40g each)
    75g Sugar (about ⅓ cup)
    ¼ tsp Cream of Tartar
    1 tsp Vanilla Extract
    1 tsp Cornstarch
    *Lemon Curd*
    2 Egg Yolks
    35g Sugar
    1 tsp Lemon Zest
    40g Lemon Juice
    3 TBSP Butter (Salted)*
    *Whipped Cream*
    ½ Cup Heavy Whipping Cream
    1 TBSP Powdered Sugar
    1 tsp Vanilla Extract
    *Optional Garnish*
    Fresh Berries
    Mint
    *If your butter is unsalted, add a small pinch of salt to the recipe
    If you are making them in advance, make sure to cool the meringue nests completely, put them in an air-tight container, and store them in the fridge. Do NOT freeze them.
    The lemon curd and whipped cream can also be prepared and stored in the fridge separately.
