I found that a 27 degree edge works best and holds up the best...I had a 20 degree edge on it but lost its retention to quick and I rolled the edge a few times chopping! At 27 degree it holds better and doesn't dig as bad... still slices good too but I use my 6 for slicing more and I keep it on a 22 degree! I'm like you my 5 is my go to knife! But I normally pack em both on my chest with my 3 and 4 in my bag! Esse handles all my needs! I'm sure by now your pretty good at sharpening!

If you lay the stone in a plate of water it will soak it up. Then flip it over after an hour. This is a great video. Easy to do what you do. I enjoy watching. I’ll look for more of these. Have you considered taking the coating off your Esee-5?
Thanks im glad that you can tell the difference. i dont even have the camera on the highest quality setting yet because I need to get a higher capacity sd card. I have a 300x i need a 900x, i made the first video in the highest setting, and it was super clear, but i had to redo the video because it kept pausing because the card was not high enough to process the highest setting.

I've found if you want hair shaving sharp a ruby stone does a phenomenal job.

Have you considered taking the coating off your Esee-5?
Good work man, keep it up. I did the same thing with my BK14, because I didn't like the grind angle. Slices great now!
This way of sharpening works surprisingly good.

Its the exact same camera chris tanner uses at pm101. And a few other big you tube channel's. I asked around.
Is the knife flat on the stone? Or are you placing it a 20 ish degree angle?

Ryan Caiazza I stopped using wet stones a while ago I use a work sharp now Ken onion edition. But a 600-1000 duel side is great
