Made this tonight and it was a hit Thanx I have made an easier to follow list, hope you do not mind. Ingredients:- (8 inches removable base quiche pan / tart pan) (A) Pastry:- 1. 125g ( 1 cup ) All purpose flour 2. 1/4 tsp Salt 3. 85g ( 1/3 cup + 2 tbsps ) Butter cubes ( from fridge ) 4. 1 tbsp Iced cold water Method:- Sift flour into a bowl and add the butter, use a fork to combine the flour into the butter, then gradually add the water until it forms a loose dough. Wrap in cling film and refrigerate for 30-60 minutes. Baking the crust:- Roll out pastry enough to fill the tin, then prick the base with a fork. Add parchment paper and baking beans or 2 cups of rice. Place in a preheated oven at 150-160*C for 15 minutes, after 15 minutes remove the baking beans and cook for a further 15-20 minutes or until golden. (B) Fillings:- 1. 5 pcs Fresh button mushrooms ( sliced ) 2. 1 clove Garlic ( finely chopped ) 3. 1/2 Onion ( diced ) 4. 20g Carrot ( diced ) 5. 110g Chicken meat ( 1/2 chicken leg/skinless ~ diced ) 6. 15g ( 1 1/2 tbsp ) Butter ( for stir frying ) 7. 1/4 tsp Salt 8. A pinch of Sugar 9. Sprinkles of black pepper 10. 2 tbsps Green peas 11. 100ml Double cream 12. 1 Egg 13. 2 slices Cheddar cheese ( cutted into small pieces ) 14. A few pieces of basil leaves ( optional ) Method:- Put 15g of butter into a frying pan and add the onions, fry for a while, then add the chicken and cook for a short time, then add the carrot and continue to cook, add the mushrooms,salt and pepper and continue to cook, finally add the peas and cook until almost dried up. Allow to cool slightly and pour into the quiche crust. Into a jug pour the cream and add the egg, stir well and pour over the quiche (pour in half then place in the oven before filling to avoid spilling it). Finally place the cheese and basil leaves on top. Bake in a preheated oven 150°C ~ 160°C oven for 30 ~ 35 minutes or till golden brown on top. Baking time & temperature may vary depending on the type and accuracy of your oven. You may need to adjust your oven temperature accordingly.
Been making it pretty much like this for years. We like the pie a little darker (so we pre-bake longer) We LOVE basil, so to us it goes in the pie and its not optional. The filling can be adjusted a million ways. We love it with salmon and cauliflower. The most important things to remember are: don't make a smooth dough, in fact avoid a smooth dough. And don't skip on the resting steps for the dough.

@Zina Yes you can re-use the rice over and over (or a bag of beans). Just remove from crust and store in a mason jar or an airtight container until you need them next time. As for the mushroom stems, chop them up and use in the filling. Do it your way.... that’s the great thing about cooking.... do what you want. Others can do it their own way. Cheers ! 😊
