Kenyan Style Chicken Coconut Curry

  • Ingredients:
    1 1/2 kg chicken cut into small pieces
    Vegetable oil 1 1/2 tbsp
    1 large chopped onions 🧅
    2 larger mild green chilies 🌶️
    2 large ripped tomatoes 🍅 blended
    1 tbsp garlic 🧄 paste
    1 tbsp ginger 🫚 paste .
    2 tsp salt 🧂 or to taste
    1/2 tsp red chilli powder
    1/8 tsp turmeric powder
    4-5 medim sized potatoes 🥔 cut each into 2 pieces
    4/5 cups of water 💧
    200 ml of coconut 🥥 cream
    1 tbsp of Coriander leaves 🍃
    for garnishing .
    50 ml coconut cream from the 200 ml for garnishing .
    Methods :
    Heat oil, add onions 🧅 and cook till transparent
    Add green chilies 🌶️ , then add tomatoes and cook for about 5 minutes .
    Add chicken , then garlic 🧄 and ginger 🫚 paste . Simmer for 2 minutes .
    Next add red chilli powder , turmeric powder and salt 🧂 .
    Cook chicken on slow to medium heat for about 15 minutes . Taste for salt .
    Now add potatoes 🥔 and add water and cook until potatoes are half cooked .
    Next add coconut 🥥 cream and cook for about 10 minutes .
    Check if potatoes are cooked then remove from flame and garnish with coriander leaves 🍃 and coconut cream.
    Serve with rice 🍚 , parotha, chapatti, ugali or bread .
