I make a German Chocolate roll up cake and the one thing I do differently than you is that I do not powder my towel. As soon as the cake comes out of the oven, I powder the cake, place the towel over it, (confidently) flip it onto my working space and proceed to roll it like you do. For me, it seems to create less of a dusting mess and in the end, it comes out the same!
Excellent tip. I'm planning to try this cake tomorrow and, while I like being able to prep the towel beforehand, I think for the sake of my kitchen, I'd rather try to avoid the cocoa plume that John created. Thanks!

You should dust the cake with the cocoa powder then put the towel over it, after put a same size pan on top of the towel and flip the cake. It will make it easier to flip and you won’t get cocoa powder all over your counter/table. Just a helpful tip 😊
I freaking love swiss roll more than almost any other cake. I've never met a buttercream or frosting that comes even close to the deliciousness of whipped cream between fluffy, tender, superlight sponge. So delicious!
My mother used to bake from old cookbooks she got on a trip to England in the early 80s and most of them used whipped cream with chocolate brownies and cakes and that's how I like it. I think chocolate icing on chocolate cake is an American trend that has now gone global.
@@mariamtee I was born in the late 70s so the time frame matches up! My mum definitely used buttercream (just the basic, standard stuff, no meringue-based ones etc) but it was never my favourite. However, if you want a cool kids' cake, you have to go with something other than whipped cream. I remember several Barbie dolls wrapped in clingfilm to act as the top half of a "princess" where the cake was the skirt. LOL

I'm ambivalent about the TV show thing. I think that with a show, comes the people who would want to supervise and limit. I like that your presentations are your ideas and done in your way. I would assume you have more freedom as to planning, scheduling etc. It seems as if you have the perfect situation for you and your family. I think you have developed a closeness with us that we wouldn't have with someone on Food Network for example.

Love your videos. I made cakes for 50 years. I add about 1/2 cup meringue powder to my buttercream icing. Gives it a marvelous tang that tones down/enhances the sweetness. Marvelous flavor!!

Just made this today for a little pick me up, and it's sooo good! I added 1 tsp of coffee and added it on the yolk mixture, and i used dark cocoa powder.

I remember my mother would make this roll & put peppermint extract in the whipped cream filling. We loved it! Wondering if the cocoa powder could be sifted onto the baked cake, secure a towel & then flip it? That flipping trick looks a bit scary! I’m sure I would have cake & cocoa all over the kitchen!

I've used your recipe twice now, and both came out great despite having to adjust for having a slightly too small sheet pan and a birthday girl who didn't want chocolate but strawberries and cream. I actually tried a cookbook version of the cake, thinking I could ip my game, but it was a disaster, and I came back to this recipe which is easier and more reliable! Thanks for sharing this. One thing i learned from a different recipe and found to be easier. Line your pan with parchment paper, then when the cake comes out of the oven, put a piece of parchment paper on top. Then roll. No need for the mess this way! Parchment will peel off when cooled. Making this today and waiting for it to cool! Can't wait to eat it. 😊
Just made this and waiting for it to cool!! I'm from the UK so used grams, and my mixture was a bit more liquidy than yours but it still rolled up just fine after baking so just an fyi for anyone who is worried about that do not fear!! V excited for the finished product, made it for our family dessert tradition every Thursday! :)

When it came time to incorporate the egg whites into the rest of the batter, my Mom would always only use a hand whisk. Add some whites to the chocolate mixture. Gently scoop up some of the whites and some chocolate batter, lift the whisk and gently tap or shake the whisk once or twice to let some of the combined portions drop gently. Keep doing this scoop-fold and use the wires to gently mix the whites and the cake together until they are combined. It is a gentle process, not a big stir, so the air stays in the whites. I have to make this now as I have had a craving for chocolate cake for days.
@@Babka113 I couldn't find a video with a quick search on UA-cam of folding in egg whites with a whisk instead of using the spatula, but one chef started with using the whisk to move some egg whites over to the batter but then he switched to the spatula again. Drat. All you have to do is use a hand whisk instead of a spatula and fold and roll the whisk in the batter. Sometimes you need to gently tap the whisk against the side of the bowl to knock out the unmixed parts trapped inside the hand whisk and continue rolling and folding until it is all incorporated. I've only ever seen my Mom do this and it made sense to me since all of her baking was exceptional. Once you try it that way you'll wonder why people keep using a spatula when a hand whisk blends it quicker. At the end, you might need one scrape with the spatula along the bowl's bottom and sides. Good luck.

I was searching for more chocolate roll recipes and thought of you. They also use a spatula at times and are really rough with the batter but my Mom was very gentle when mixing it. I will probably use John's recipe since it uses fewer eggs but will roll it like the other video on a piece of new parchment paper instead of messing up a towel with cocoa powder - I'm just too lazy to wash that cocoa out by hand later. Will also use John's filling and ganache.

One thing i learned from a different recipe and found to be easier. Line your pan with parchment paper, then when the cake comes out of the oven, put a piece of parchment paper on top. Then roll. No need for the mess this way! Parchment will peel off when cooled. Making this today and waiting for it to cool! Can't wait to eat it. 😊

I'm from the UK so used grams, and my mixture was a bit more liquidy than yours but it still rolled up just fine after baking so just an fyi for anyone who is worried about that do not fear!! When it came time to incorporate the egg whites into the rest of the batter, my Mom would always only use a hand whisk. Add some whites to the chocolate mixture. Gently scoop up some of the whites and some chocolate batter, lift the whisk and gently tap or shake the whisk once or twice to let some of the combined portions drop gently. Keep doing this scoop-fold and use the wires to gently mix the whites and the cake together until they are combined. It is a gentle process, not a big stir, so the air stays in the whites. I have to make this now as I have had a craving for chocolate cake for days.

@@Babka113 I couldn't find a video with a quick search on UA-cam of folding in egg whites with a whisk instead of using the spatula, but one chef started with using the whisk to move some egg whites over to the batter but then he switched to the spatula again. Drat.
All you have to do is use a hand whisk instead of a spatula and fold and roll the whisk in the batter. Sometimes you need to gently tap the whisk against the side of the bowl to knock out the unmixed parts trapped inside the hand whisk and continue rolling and folding until it is all incorporated.
I've only ever seen my Mom do this and it made sense to me since all of her baking was exceptional. Once you try it that way you'll wonder why people keep using a spatula when a hand whisk blends it quicker. At the end, you might need one scrape with the spatula along the bowl's bottom and sides. Here is a folding technique video using a wire whisk at the 3 minute 30 second mark (This world-famous cake melts in mouth! Fast and tasty! Cake for Christmas!) is the YTube title in case the link does not work. I should have guessed it would be in a German cooking video. I was searching for more chocolate roll recipes and thought of you. They also use a spatula at times and are really rough with the batter but my Mom was very gentle when mixing it.
I will probably use John's recipe since it uses fewer eggs but will roll it like the other video on a piece of new parchment paper instead of messing up a towel with cocoa powder - I'm just too lazy to wash that cocoa out by hand later. Will also use John's filling and ganache.
