Hey Recipe 30, I will tell you my secret recipe you can try it but don’t tell anyone and believe me its better than KFC not kidding 😋 for the marinade instead of cream use yoghurt 1/1 ratio with water, Vinegar, Salt, Sugar, ginger pdr and BP and in the seasoning flour add to your Spices some Mustard pdr and oregano then no other fried chicken can beat this recipe its a promise, pls let me know your results if you try this and if you make it to a business send my royalties to the orphanage near you.. I made this today. Fried one piece first. We eat a lot spicier and a lot more salt. So I added 1 tsp more salt and 2 tsp extra hot chili powder. 🎉🎉🎉🎉 A party in our mouth. Thank you
No need - the crispiness is from the corn starch and the dredge. 12-15 minutes is enough to get internal temp to 165F, anything over would overcook the chicken and make it dry from the inside. You’re looking for it to be juicy on the inside and crispy outside.

Easy to make. Tried it. But very hard coating and not so well cooked chicken. May be because the drumsticks were very big.The coating was not staying on the chicken.

A good way to make sure your first costing stays on (when double dipping) is after dipping allow the meat to rest a few mins before doing the next costing -- to allow the batter to stick properly onto the surface. Or you can also place the batch in the fridge to chill before doing the 2nd dip, in cases where you're making a large amount. Edit: Hope this helps.
I never second coat. I find that it makes the crust too thick and tough. But to get a nice thick crunchy crust, you can put the piece in the flour, sprinkle flour generously on top, then press the flour well into the chicken by hand, then flip and repeat, then shake excess and let it rest. You'll have a coating that won't fall no matter what!

The seasoning Mix looks about like what I use now except maybe a little more cayenne. Think I will try stepping up to full milk as well
