- Steak experiment to learn how many times you should flip your steak. Today we are running an experiment requested by you. Today we will find out once and for all if flipping a steak many times makes any difference. This video was requested by Elemenoand it’s one of the oldest myths in the grilling world. How many times you are allowed to flip your steak on the grill. This may be one of the first things someone told you when you started cooking your own steaks and because of that, it has stock in your mind to the point that you repeat it to the new generations without even knowing how true it is. Let's find out how much water this myth holds!

I put my steak on the grill and immediately start cutting little pieces off to eat. By the fourth flip I’ve accidentally ate the whole thing. Every time.

I find the type of pan you use and temperature is the key behind a perfect crust, you only need to flip it once; also salting your steaks 24 hours before cooking helps a lot with the crust. I use the GreenPan Chatham ceramic non-stick open frypan, I don't even need to use any tallow or ghee and if you pat dry your 24hr salted steaks before frying them you'll get a even better crust. I've even used a hair-dryer and paper towels to dry-out the surface of steaks to achieve chicharrón like crusts.

You can get it from places like Costco too! It's just labeled as Sirloin Cap, but it's the same cut.
@@Elazul2k Good to know. There is a Brazilian market near my place that sells Prime Picanha for about $8 a pound (comes to about $25 for the whole thing), which is where I buy it from. They sometimes have it on sale at local grocery stores (Bravo, Thrifty), but they're not as good.
That was definitely a great price! That picanha was a prime and a GUUD amazing prime that was! 😀
If you find too sirloin where they sell the whole top (mouse, cap, and main top sirloin), I will look for the ones that are on the end and end up being mostly sirloin cap. You get like 75% picanha for the price of too sirloin.

I get cast iron skillet hot then put in steak, 2 minutes dont touch, flip, 2 minutes dont touch. Flip add 2 dabs of butter start basting for 1 minute, flip add more butter if needed, baste another minute. Continue until 10° below desired internal temperature. Take off and pour butter over steak. Rest. That's how I roll.

I flip my steak every 15-20 seconds after watching Chef Heston..... also when I flip it once I get more grey banding .. flipping it regularly i get a more consistent pink throughout the whole steak
That's a way to do it. Here we were testing more about taste and juiciness but I should say that all of them looked stunning! Dont tell Mrs Ninja! 😂😂
@@SaltyTales The multiple flips give more consistent result. As you can clearly see on the once flip steak the bottom half is medium-well and the top is rare.
Could it be that you like your steak cooked less?
There is a Chef whom explained juices like water will expand away from the heat source....so by flipping it regularly u r trying to keep juices near the centre of the meat .... if u start seeing the juices coming out from the top surface of the steak means it’s probably a medium & above done steak
I use the 15 sec flip method it is esp good on thick steaks for consistent look, it is more like a sous vide style steak ...

America's Test Kitchen did extensive testing on this subject. It would be worth a look at their You Tube video. They've tested their method on dozens of steaks to figure out the optimum way of doing this. And yes, it involves multiple flips.

I think the “ flip it once” myth only applies to stainless steel and cast iron pans, because they require sufficient time for the proteins to bond with the metal pan to achieve browning. Flipping it over too early stops the bond from forming and exposes the pan to the other cold side of the meat too quickly, which can drop the pan temperature, cause moisture release and prevent browning. I’m not an expert, but this is my hypothe.. hypothethus.. hippopotethus... whatever you call it...

Great experiment. I find that in my experience when the cuts are thicker that it's best to flip only once. Where when the cuts are those cheap grocery store thinner cuts you might want to flip them multiple times so that you can develop a good crust while allowing the centre to cook more slowly into a medium rare. I also find with leaner cuts (such as tenderloin) it may be better to flip them multiple times as they don't retain the same level of juiciness as a picanha or ribeye.
Tip to not get Brazilian fans really mad: do never commit any violence to picanha's fat. It melts like butter in our mouth.

How can i know how many minutes should a steak be cooked on each side to get a perfect medium rare?
The picanha is cook right straight on the fire and I give i about 4 to 5 mins per side for that perfect doneness!
depends on your steaks size, thickness and the temprature of whatever you're cooking it on. Best way to get your desired doneness is to use thermometre or by feel

If we talk science, flipping it more often causes the crust to form more slowly, as when it is flipped, the surface cools down slightly. When returned to the flame, it has to heat back up before it can start browning. If a steak is flipped a lot, then it will be spending more time "reheating" the crust, and the steak will cook internally more for the same level of crust formation to a flipped-once steak.
You can even see in the video, that the flipped steak does look slightly more cooked, which may equate to the tenderness as well.
You can compare it to convection baking, if you'd like.

Looks like number A was a thinner steak than B n C, probably why it cooked more.
I guess they cooked the same but the flipping took a bit of a toe on number A juiciness... I think what happened is that the juices were still moving around when I cut the steak and we loose some of it...
