How hot will this curry be . If want to make medium hot how many dried red chillies should I add . Thank you
It will be very hot since it’s a Vindaloo. (8/10 If you want it to be medium hot you could use 5 red chillies and 2 Kashmiri chillies.

We used Jaggery and vinegar instead of tamarind in this video. The ingredients are slightly different but overall it still has that vindaloo taste. You could substitute tamarind instead of the vinegar and jaggery if you’d like to!

I wanted to check before answering. I bought a vindalloo from a restaurant. I tasted, mine, yours, Thiers and so on.
In theirs there was a taste note. Now I know what that is. It is Star Anise, possibly cinamon too.
Is it usual to add Star Anise please?

I've always been unsure if I need to cook meat longer or less to avoid it being tough. So, longer is the answer?
Yeah if you want your meat to be softer then you would have to cook it longer but on the low flame so you don’t overcook it and get the meat dry.
your other video of how to do a vindaloo sauce..you don't add red chillie, only dried kashmir chilie...Will it still be spicy.
Yes it will still be spicy
Genuine question, why use vinegar as one of the ingredients?
In a spicy dish like this it will balance and develop the taste
