My grandma liked to eggs chorriso for breakfast, thank you for remembering me for the moments/right now I will do it. Thank you Mr. Bayless! I'm going to the supermarket right now! Wow!
This is a plain and simple breakfast. I'm 76 so I go for the ld style, I just add the cracked eggs to the frying chorizo. I love to see the white and orange of the eggs cooked between the chorizo pieces. Scrambling them in a bowl is the French way to make scrambled eggs. I like to see the white of the cooked eggs and I also like the eggs firm and dry. Well cooked. To each his own.
One of my all time favorite breakfasts. I make chorizo using what I believe to be Rick's recipe. We usually add diced roasted potatoes as well. The roasted poblano sounds like a great addition that we'll have to try.
One of my all time favorites. Can’t wait to make this version with the poblanos!!!! Funny enough, growing up as a kid in Mexico, I didn’t like chorizo. I found it overpowering. But now I love it. Typically, I like it with a salsa roja 😋
I have been following you culinary expertise for years.I love this you tube pod cast.I make this as a breakfast special, wonderful.Keep up the good work Rick.
My favorite breakfast since a toddler...chorizo con heuvos con papas frijoles and fresh homemade tortillas. I have this at least once a week and my idea of comfort food add a cup of champurrado. 👍🙏👏🤙✌🌮🌮
In 1964 my family and I spent 6 months in Mexico. My staples were Huevos con Chorizo, Pollo Frito, and Cafe con Leche. If I remember right you and your family were in Mexico at the same time. i am now 70 and Huevos con Chorizo is still one of my favorites. Unfortunately, it is hard to find good Chorizo in SW Colorado.
I have learned, quite recently, that it is so much simpler to cut open the poblano, remove the seeds and veins, then roast them. No fuss; no mess. You should try it. It really is a game changer. Thanks for the wonderful, inspirational, educational videos.
As always, love learning real Mexican food from you. I despise the way many Americans butcher and kill foreign cuisine. Love that you cook your eggs to where they still have flavor. I will never understand why Americans overcook their eggs.
Great recipe! I've been making this for breakfast for years - it's fast, easily made, and delicious... that's a winning combination every single time. I use serranos (if I can find good ones) or jalepenos, because the heat is my friend. 🥵👍
Cute story: my little brother was kindergarten star of the week… Teacher: What’s your favorite food? Lil Bro: Chorizo con huevos y papas. Teacher: Your Papa what? Lil Bro: No; papas, you know, potatoes? Teacher writes on board… Favorite Food: Papa’s Potatoes 🤦🏻♀️😂
Wow what coincidence today, I made chorizo n eggs with potatoes n refried beans on the side for our breakfast! I like a 2-1 ratio of chorizo to egg. Bon a petite…..😋
My fave! Yours look extra tasty with the addition of eggs and poblano. I cook my eggs with minimum stirring, dropping them into the middle of the pan after moving the chorizo aside and adding a bit of oil in the center of the pan. I like to see chunks of eggs in my tacos, looks better.
How about making different ways to make a quesadilla with different cheeses and other ingredients. I would love to see how you would make it happen. Thanks Chef🌻
Rick, I've been following you since I discovered you, and I have to ask: what is the method with your utensil management? It seems you have them all in a container with some liquid. I see you pull them out without drying it or even shaking off before use, and in this video you took a fork used to beat eggs, put it back in there and later pull a serving spoon from what seemed to be the same container. Now, I know that you are certainly a professional, it just seems like maybe there is some countertop management technique here that I want in on.
Hi Rick; while this question is not related to the dish you prepared (looks great!), I do have a question regarding equipment. What brand Gyuto are you using?
My wife is a vegetarian, but she LOVES the meatless chorizo from Trader Joes...with eggs for course. I cut up a Jalapeno and toss it in at the same time as the onions.
I follow a lot of food channels here on UA-cam. I’m following older women from Mexico from there ranch homes. The food looks hearty! Mr. Bayless, do you have a recipe for the chorizo? I had homemade chorizo once in Mexico City while visiting and I got a hint of vinegar, and bar none, that was the last time I ever had anything like that ever! And can’t seem to fined a good recipe for chorizo.
My next door neighbor used to make something like this for breakfast occasionally but with nopalitos in it. She always brought me a Care package when she did. I so missed that after I moved. Is it as simple as peeling a dicing the nopalitos to make the combo? I know nothing about the cooking of them, just the eating. ;) ALSO, I add in cheddar cheese to my eggs and chorizo and make it as a quiche. Love chorizo!
If you check his site, I'm pretty sure there is a recipe there for homemade chorizo. You can match a batch, freeze some and have the rest for breakfast.
I grew up eating this but unfortunately I ran across a big fat vein in the chorizo and from that point on it just wasn't appetizing anymore, but I recently discovered soy chorizo and I was amazed with the flavor, less greasy and no veins or organ meat. Couldn't tell the difference in taste
Who's advocating a high heat method of cooking scrambled eggs? I've not seen one credible person doing this. This dish looks amazing but that's a weird take.
When you fry tomatoes, onion and green peppers you are making sofrito, not pico de gallo, which is a fresh sauce. Also, my favorite “chorizo con huevo” is made with a tomato and dry chiles sauce. It’s frankly one of the best breakfasts I ever had at my family’s home in México. Edit: wait! You roast the chiles and then rinse them off briefly? You’re taking away all the delicious smoky flavor of the roasted pepper. What’s going on with you in this recipe?
Rick your meal looks great but why are you using one of the worse unhealthy industrial oils on the market (sunflower oil) avocado or olive oil would be much better
I feel like I'm going to vomit everytime he pulls a wet utensil out of that nasty ass water and then puts them back in the water after using them... Mind you he pulled a fork to beat the eggs then put it back in there, then later pulls a spoon out that same water to taste the dish... Bruhhh 🤮🤮🤮
Rick Bayless is the reason I started cooking late in my life. But it's never too late for that. Thank you Rick.
Chorizo and eggs never get old.

He has a separate video of chorizo, onions and potatoes on a tortilla.
The thing I love the most about your videos (besides the food!) is your excitement for these delicious recipes!
This was a staple as a child; still a breakfast staple today. I love it.

Made this for brunch today. Haven't made Chorizo and Eggs in 20+ years. Thanks for the inspiration!

Love this Chef. I have made chorizo and eggs before but your version really kicks it up. I will definitely be trying this version this weekend!
Yummy!
Also, did you place the fork back with the other utensils?
A great riff on my all-time favorite comfort food. Thanks so much, Chef!
Quite welcome. Enjoy!

Thank you Rick. I’ll be making this classic aquí in just a few I have everything for it.
Chorizo and scrabbled eggs also one of my favorite breakfast dishes , and thanx for the recipe for making my own chorizo, simply delicious!

Delicious!! Perfect recipe
You can hear someone saying “perfect!” at the very end; I would concur. 😊
🤭
This is my go to breakfast but I keep it very simple chorizo and eggs on a flour tortilla salsa Verde and a tequila sunrise 🌅 on the side. 🙌🏻😆
Nice way to start the day!
Thanks a lot. I love your videos.
I love these spicy recipes 🌶
Making this for breakfast tomorrow morning!
Yum! Yes, low & slow! 😋
LOVE chorizo and eggs. I like making a skillet tomatillo salsa and fried potatoes to go with it 😁
I'll never forget when i was just a kid and a good friend's mother made us chorizo and eggs for breakfast. oh my god, it was amazing.
and while Soyrizo is okay, it doesn't really match up to the OG chorizo in terms of flavor and how it smells in the kitchen when you use it.
So delish eggs and chorizo❤️

i add extra cumin and chipotle, seems to give that extra boost i crave
living in Montana, the only good chorizo is the homemade chorizo I make! Your Green Chorizo is also a fan favorite with eggs in the morning as well!!
Love that one too. Thanks for watching!
This looked so good I made it today for lunch - outstanding!
are you a car?
Lovely!!
I love the chorizo from our local mercado.
How about making different ways to make a quesadilla with different cheeses and other ingredients. I would love to see how you would make it happen. Thanks Chef🌻
I like to add chopped raisins rehydrated in some sherry for a touch of sweetness.

He's talked about it in a video, but I don't remember which video. Yes, he has water in there.
Hi Rick; while this question is not related to the dish you prepared (looks great!), I do have a question regarding equipment. What brand Gyuto are you using?
this is a hero's breakfast
Chorizo de San Manuel is the greatest chorizo of all time.
I looks perfect for me..keto...would you make chili poblanos..?my favorite of all Mexican dishes..I make them at home but would like your version
Chef, what brand are your non stick pans?

Perfect! :)
Actually happened to be having chorizo & eggs for breakfast as I watched this video. What a coincidence.
Dang that looks good. I could see adding a little cheese but…dang… that looks good!
I do like potatoes in my chorizo and eggs.
YUM!!!!
Shoutout to Jonathan "The Duke" Mardukas from Midnight Run!
Rick is my Mexican American uncle😄🤣
Any way you make huevos con chorizo. It's "delish"😋
Yum!

There are nopales in a jar that you can buy. My dad would add them to his eggs as well.

I love this channel so much, but Mexican produce (especially Mexican chorizo) is like rocking horse poop to source over here in the U.K.
If you check his site, I'm pretty sure there is a recipe there for homemade chorizo. You can match a batch, freeze some and have the rest for breakfast.
Rick > Skip !
Should've added some potatoes, at least that's how I'm used to making this.
Yes, soyrizo is pretty grub
I was really skeptical of the plant-based chorizo, but it was actually really good. The only problem is I can't find it now.

I don’t like onions in my food. I don’t like spicy foods neither.

Best chorizo and egg.mexican cooked. Very authentic!
That taco is just screaming for sour cream!
and your eggs broke. rule one: NEVER mix raw eggs in the pan. cook your eggs, THEN fold in your sauteed chorizo.
Why's that? Seems everyone does it the way he did. Well, sort of.
No
