Sir sergy as far as I know sugar is one of the most important condiment in any dishes that's why we Filipinos love salty and sweet.. liempo means the tummy part of the pork meat..
When we marinate a meat any kinds of meat there's a combination of sugar we Filipinos don't like to salty and to sour that's why we put sugar in our dish when we cook..
Normally, Filipino dishes are sweet and salty and sometimes with a tinge of sourness that's why they are good with rice. These days though, some make it sweeter, no idea why. My tip is, if you find it sweet, you dip it with vinegar. Yup, Inasal is different. It's a style or method of cooking originated from Bacolod (Visayas). Liempo is a cut from pork belly, if I am not mistaken.
Its always sweet that why every restaurant gives u a sawsawan like vinegar pr calamsi to balance the taste or flavor what u want u want more saultier there is fish sauce.thats it
Im pure Filipino who grew up in the province. I love sweet meat - majority of Filipinos are. But my DAD!!!! He hates it hahahaha. Everytime i cook, he says, "dont make it sweet" 😝
I also don't know why, I think Filipino like sweet but for me just a tinge of sweet is nice. Liempo is part of the meat of pig stomach where the ribs are. If you want cook or grill them you can control the amount of sweetness. I think Chinese people sweetness too so we adapt them.
Many Filipinis have afooted the American taste. Also the Japanese. It used to be when we would eat food with salt, especially if it is to go with 8:01 rice, and with sugar for our desserts and most baked goodies.
I'm now learning Russian from you Sergei. .. suka, inasal. Hahaha Not sure why and whenPhilippines cuisine evolved from salty sour to sweet, salty sour but it was never like that before.

Liempo means pork belly… also not all restaurants in philippines serves sweet dishes. It depends on the restaurant but… most filipinos are used to eat and like to eat bbq or spaghetti with a touch of sweetness. But not all kinds of foods. Adobo also its yummy when it’s a bit sweet and salty at the same time with lots of soy sauce to balance the sweetness.
Next time you eat in mang inasal drizzle the chicken oil in your rice and prepare a dipping sauce a soy sauce, calamansi with chilli that's Filipino style to eat in mang inasal...
We use sauces to minimize sweetness. Sugar is used to replace MSG (which is 3rd level sugar cane yield). Use toyo and all meats are viand that must go with rice.
because Filipinos very sweet people kidding aside because we're like a but not all the time me sometime i cook the original Tates of adobo without sugar depends what you prefer dish
Sugar is supposed to be used as a spice, something to balance the sourness of vinegar. I am with you, I don’t like sweet meat as well. I think it depends on the region in the Philippines. I grew up in northern Luzon and I don’t remember eating sweet barbecue or sweet adobo.
Me too my Mom Never Use Sugar in Her Cooking She Use Mostly Coconut Milk 😂😅😂😂 Even in Paksiw she makes it Salty and Put Coconut Milk So Delicious…. ✌️✌️✌️
no not at all. Like i said not all Filipinos like sweet in their cooked meat, i for one is not fond of sweet meat neither processed meat. Sweet meat dishes originally came from Batangas and Tagalog regions that is why sweet adobo was called adobong batangas or adobong tagalog. Even sweet spaghetti of jollibee is inspired by batangas way of cooking.
I agree that Pork bbq from Inasal is a bit sweeter than other BBQs... but you know we normally eat chicken Inasal with Toyomansi or soy sauce with Kalamnsi and that added sauce which is made from chicken fat(orange sauce originally made by Inasal) it will compliment and balance the sweetness taste with the soy sauce and kalamnsi, it should taste better if you eaten it that way.. which we normally do filipinos.. dip the meat to a soy sauce with kalamansi..and it lessens the sweet taste of the bbq meat.
not all Filipinos like sweet marinade like me I like savory not sweet.we only put sugar on adobo to balance with vinegar but not much, most of Filipinos like sweet taste that is why Diabetes is very common in the Philippines! Liempo- is a part of the meat with layer of fat with skin or the belly part

if you want not sweet inasal.. you try the inasal from Bacolod City..its not sweet there.. only the Inasal from Iloilo area(Like mang inasal) are sweet. liempo is pork meat the kind of cut
Just try to put vinegar or kamansi if u dont want to taste sweeter what i mean is put the vinegar in plate and bbcue seperate all put all in yhe vinegar plate and drink first beer and get 1 meat and then u siddenly taste no sweet anymore
Hmmm.. thats really peculiar.... I am not sure when this trend of adding sugar to savory dishes started ..... I dont remember it being a thing that people did when I was growing up... Whaterver sweetness you taste is supposed to be from carmelizing of naturally occurring sugars in food... like sautaeeing onions and vegtables... not from adding sugar.
That is called culrure, food really depends on who eats it, orhers may not like one's taste bud, but that does not mean its not good.. just like if others dont like blunt or salty food.
