Katsuo Tataki Recipe (Seasoned Seared Skipjack Tuna) Bonito Tataki | Cooking with Dog

  • We are making Katsuo Tataki using sashimi-grade skipjack tuna and lots of aromatic vegetables. This is a local dish in Kochi Prefecture. Lots of aromatic vegetables will bring out the flavor of the Katsuo Tataki.
    How to make Katsuo Tataki

    (3 people) Cook Time: 15 minutes
    * Chilling katsuo in the fridge is not included in cook time.
    350g Katsuo Fillet - sashimi-grade bonito with skin (12.3 oz)
    150g New Onion (5.3 oz)
    30g Spring Onion Leaves, Chopped (1 oz)
    1 tsp Ginger Root, Grated
    3~5 Shiso Leaves
    2 cloves of Garlic
    - Sauce -
    3 tbsp Soy Sauce
    1 1/2 tbsp Vinegar
    1 1/2 tbsp Lemon Juice
    1 tbsp Dashi Stock
    (1 tbsp water+a pinch of dashi stock powder)
    1 tsp Ginger Root, Grated
    * 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

    OMG this is too good to even look at. I could just imagine how crunchy and smoky the skin of the fish is while the inside meat is just heavenly buttery and soft and tender.

    New onions are juicy and refreshing and not very pungent so you can eat as much as you want :) Sliced radish and carrot aren't usually used for this recipe but you use them if you want.

    New onions and garlic are available when the katsuo (bonito) is in season! They are juicy and not very pungent so you can eat a lot of them :)

    Yes! Place a broiling rack on your gas stove and sear the fish with direct heat :) You need time to clean the stove after cooking, though.

    This is very similar to Ceviche as it happens. I don't remember such big pieces of fish in the Ceviche I ate, but the onions and citric acid to cook the seafood is a similar technique. This looks great as always, Chef.

    You can use tuna (maguro まぐろ) instead of the bonito (katsuo かつお)!

    The brilliant colour of the fillet really makes it look amazing when plating. I would love to try a slice of the fillet without anything else on it & then afterwards just to compare how much the vegetables & sauce improve the flavor.

    Katsuo tataki is usually sliced a little thicker than sashimi but you can slice into your desired thickness :)

    This looked so tasty. The only alternative I can think of to the bonito hat most people could buy would be maguro, the red tuna that you see served at any sushi restaurant. They don't sell it with the skin on though, and a piece that is half the size of the bonito chef used will run you round 20-30 USD
    can't wait for the cream puff recipe.

    Mmm, it looks so flavorful and juicy. :) I don't think the Super H Mart near me carries sashimi-grade bonito, though, sadly.

    katsuo tataki is my favourite type of sashimi since coming to Japan. People don't seem to realise that the side vegetables are optional and that raw onion, daikon and garlic etc is to put in flavour not necessarily for eating!

    Just throwing this out there for the haters, but you have probably already had raw garlic if you have ever had salad at a high end restaurant, or from a talented home cook, as it is often in fresh made salad dressing. It might be in store bought too but I honestly don't know. Also lots of people eat raw onions! Both can be good if used correctly.
    On another note, I have never seen a recipe for fresh bonito! If I ever find some fresh enough I will have to try this. Looks delicious! I love to find new ways to use ingredients. Thanks Chief and Francis!
