- We are making Katsuo Tataki using sashimi-grade skipjack tuna and lots of aromatic vegetables. This is a local dish in Kochi Prefecture. Lots of aromatic vegetables will bring out the flavor of the Katsuo Tataki.

I love watching these videos and I am so amazed that Francis never jumps off and eats the food because I am sitting here drooling on myself... he's got a lot of will power.
Chef, your precise chopping skills never cease to amaze me!
everytime chef speak i feel happy, she is such a nice lady.
Sounds amazing! And Francis is so cute with his little tie. Thank you, as always, for the wonderful recipies.
OMG this is too good to even look at. I could just imagine how crunchy and smoky the skin of the fish is while the inside meat is just heavenly buttery and soft and tender.
Uwah, I want to eat this TT_TT
Chef Francis, I wanted to express my gratitude for all the recipes you placed on youtube. I have tried three of your recipes and they have come out great. This dish looks delicious and will be trying out soon. Shefu arigatō.

this looks delicious and easy to cook, I will definitely try to make it one day!
The foods on this channel always look so good, but there are hardly any recipes I feel confident trying lol. I'm salivating as I watch this...
New onions are juicy and refreshing and not very pungent so you can eat as much as you want :) Sliced radish and carrot aren't usually used for this recipe but you use them if you want.
I'm moving to kōchi-ken in August to teach English! Thanks for sharing this local dish chef!
how i wish i could have this ! yum!
New onions and garlic are available when the katsuo (bonito) is in season! They are juicy and not very pungent so you can eat a lot of them :)
wow it looks so good!
Gimme! That looks soooooo good and amazing! Healthy too.. mmmmmm need to get my choco butt to Japan asap :3
This looks amazing
Mmmh, I bet the texture of that is just great!
I love all of your videos!!!!
This one reminds me of yaki ika/ grilled squid in soysauce, it's my all time favorite! Hopefully some day you will teach us how to make yaki ika too!

Next video!!!! And the fresh sashimi grade bonito was making me drool over my screen
Yummy! another great vid chef and francis who look so kawaii with that tie! :)
wow! Delicious!!!!
Yes! Place a broiling rack on your gas stove and sear the fish with direct heat :) You need time to clean the stove after cooking, though.
Oooo! Cooked on the outside and raw on the inside! Thats very intresting to me. Looks delish c:
This is very similar to Ceviche as it happens. I don't remember such big pieces of fish in the Ceviche I ate, but the onions and citric acid to cook the seafood is a similar technique. This looks great as always, Chef.
Looks delicious :))
thanks for the recipe
oooh a dessert dish soon!
Sashimi-grade maguro (tuna) also works great for this recipe! :)
love this recipe! my father love this so much! :) raw fish is one of characteristic menu as Japanese food. like sushi.
Exactly! Well said...
Looks delicious!!
Insanely delicious with great beer!
Frances is adorable in his little tie!
looking forward to the next video !...^^
always looks delicious!
You can use tuna (maguro まぐろ) instead of the bonito (katsuo かつお)!
新玉ねぎです(^^) A new onion, also knows as young onion was used. It's juicy and not so pungent :)
i like how francis was falling asleep during the intro
The brilliant colour of the fillet really makes it look amazing when plating. I would love to try a slice of the fillet without anything else on it & then afterwards just to compare how much the vegetables & sauce improve the flavor.
食べたくなりますね♡!
Ooh the next video's food item looks tasty!
Delicious! Francis is looking lovely with the cute tie
Yum
Katsuo tataki is usually sliced a little thicker than sashimi but you can slice into your desired thickness :)
This looked so tasty. The only alternative I can think of to the bonito hat most people could buy would be maguro, the red tuna that you see served at any sushi restaurant. They don't sell it with the skin on though, and a piece that is half the size of the bonito chef used will run you round 20-30 USD
can't wait for the cream puff recipe.
Looks sooooo yummy
This is one of my favourite dish, ive also made this with lightly seared beef MMMmmmm...
That is going to be delicious!!!!
Not everybody has to like the same foods. This is going to be a pretty strong tasting dish to anyone!
What would it be called with Ramen or Udon noodles? Cause I'm willing to try it that way.
Gosh everything on this channel looks so yummy! D: And YAY Shu Creme's next? x3 Can't wait!!
Oh~ I can't wait to make cream puffs!
I can hardly make Mac and cheese but I just really love watching these videos
Looks good
I've never drooled so much in my life, I wish i could find sashimi grade fish near me, i would soooo make this
Francis is so cute with his little tie!
looks so good omg :'( makes me hungry!!!!
Mmm, it looks so flavorful and juicy. :) I don't think the Super H Mart near me carries sashimi-grade bonito, though, sadly.
This looks soo yummy!! ^_^ Love how the bonito is seared on the outside mm...bet it tastes awesome with all of those onions and garlic too =d
This videos have so much swag.
Maguro Tataki (tuna まぐろ) is also delicious! :)
OMGOMGOMGOMG WHY DOES THE CHEF NEVER AGE?!:0
its been a while since chef taught us how to make desserts, yey! cream puffs! :D
katsuo tataki is my favourite type of sashimi since coming to Japan. People don't seem to realise that the side vegetables are optional and that raw onion, daikon and garlic etc is to put in flavour not necessarily for eating!
I used shredded daikon instead of onion since I'm allergic. Tastes great!
It is the season of delicious bonito.
I have never seen so much onion in one dish, but might be good. Thanks for the video.
Looks delicious! owo
soooo good
Just throwing this out there for the haters, but you have probably already had raw garlic if you have ever had salad at a high end restaurant, or from a talented home cook, as it is often in fresh made salad dressing. It might be in store bought too but I honestly don't know. Also lots of people eat raw onions! Both can be good if used correctly.
On another note, I have never seen a recipe for fresh bonito! If I ever find some fresh enough I will have to try this. Looks delicious! I love to find new ways to use ingredients. Thanks Chief and Francis!
looks super delicious c:
This dish has an abundance of two of my favorite ingredients. Onions and garlic. This is gonna make some stinky breath for sure!
I love sashimi. these sashimi to right.
the next one looks dericius!
So excited for cream puffs.
Fish, garlic, and onions, I cant imagine a better date meal :D
