  • **THIS IS A CORRECTED VERSION OF MY VIDEO ON PINTO BEANS CANNING.**
    ---I HAVE INCLUDED 15 TIPS ON THINGS TO HELP YOU BE SUCCESSFUL IN CANNING NOT ONLY PINTO BEANS BUT IN CANNING GENERAL.---
    *TIP#1 - MEASURE THE BEANS TO TELL HOW MANY JARS NEEDED.
    *TIP#2 - STERILIZE THE JARS WHEN HOT WATER BATH CANNING BUT NOT NECESSARY IN
    PRESSURE CANNING.
    *TIP#3 - CHECK THE RIM OF THE JARS TO MAKE SURE THERE ARE NO CHIPS. A CHIPPED RIM WILL
    CAUSE THE JAR TO NOT SEAL.
    *TIP#4 - ALWAYS WASH THE LIDS TO REMOVE ANY MANUFACTURING CONTAMINATES.
    *TIP#5 - HOW MUCH WATER TO BOIL THE BEANS IN. I WANT ENOUGH WATER TO FILL ALL THE
    JARS WITH WATER THAT THE BEANS ARE BOILED IN.
    *TIP#6 - HOW MUCH WATER SHOULD I PUT IN THE PRESSURE CANNER. 3 QUARTS.
    *TIP#7 - WARM THE LIDS IN HOT, NOT BOILING, WATER. I BELIEVE THIS HELPS MY JARS SEAL
    BETTER. ALL 16 JARS SEALED.
    *TIP#8 - HAVE WARM WATER IN THE PRESSURE CANNER. SITTING A HOT JAR IN COLD WATER
    MAY CAUSE THE JAR TO BREAK.
    *TIP#9 - WHEN HOT PACK CANNING BOIL THE BEANS 3 TO 5 MINUTES. THIS WILL HELP THE
    BEANS TO EXPAND AND HELP RELEASE ANY TRAPPED AIR.
    *TIP#10 - SALT, USE A NON-IODISED SALT. SALT WITH IODINE WILL TURN THE JAR CONTENTS A
    DARK COLOR.
    *TIP#11 - DO NOT SIT A JAR IN THE CANNER, IF DOUBLE STACKING, WHERE IT PREVENTS THE LID
    SAFETY LATCH FROM FREELY MOVING UP AND DOWN.
    *TIP#12 - MAKE SURE THE STEAM VENT (PART OF THE LID) IS NOT PLUGGED. BEFORE YOU START
    CANNING CHECK IT TO MAKE SURE.
    *TIP#13 - DO NOT LET THE PRESSURE GO UP AND DOWN (YO YO) THIS WILL SUCK THE LIQUID OUT
    OF THE JARS
    *TIP#14 - WATCH THE PRESSURE CANNER PRESSURE GAGE CLOSELY, DO NOT GET BUSY DOING
    SOMETHING ELSE.
    *TIP#15 - DO NOT QUICK RELEASE THE PRESSURE CANNER STEAM WHEN THE CANNING TIME IS
    UP. QUICK RELEASING THE STEAM WILL SUCK THE LIQUID FROM YOUR JARS. AND MAY
    CAUSE THEM TO NOT SEAL.

      @@OldAlabamaGardener yes!!!!! the potatoes we had with supper tonight, were some I'd canned about a month ago....it was the odd 1/2 quart I had left over (I still have 5 full quarts in the pantry) so I figured I'd open these few for just me and mama.....and they tasted like CANNED potatoes! lolol, I'm not too fond of canned potatoes for real.......is there a way to make them taste better?

      @@sophiarieber7558 On canning potatoes so they don't taste like canned potatoes: The potatoes I canned in this video, I did it cold pack. I have since read that potatoes should be hot packed (safety reasons). So, the next time I can potatoes, it will be hot pack. I don't know how much if any difference this will make, but I will see.

    I watch caning videos to get ideas for something new to can or tips I didn't know. I think your video is so clear and to the point. Since I have canned before I know at one part you were talking about your area of the country only .... a new caner might not ..... I need 14 pounds of pressure where I live, but if I were a new caner watching you I think I would do it at 10! Otherwise I think it was just the most excellent of videos. I worked full time with 3 children to raise alone. I have had a garden of some kind of my own since I was 16, I'm now 67. I caned for many years then stopped. 2 years ago I decided to start caning my own food again after I retired. Makes me so happy when I can see those jars on the shelves.

    My Grandma and Granddaddy always planted pinto beans from the store and she always canned them for her green beans they were so good, best green beans I ever had.

      Hi Paula. Yes, I am doing well for being 81 years old. If you aren't gardening, meaning growing your own, you can, can dry beans. You will need to process them much longer than what I show here.

    I have the same pressure canner. I bought another weight that can be adjusted by removing the discs. Makes canning alot easier and it keeps the pressure between 10 and 11lbs once you get the temp adjusted.

    Thank you, Sir. Excellent tutorial. My question, though, is for those of us who haven't grown our own beans. Is the cooking time when using dry beans (before putting in jars) the same? I have canned dry beans, for 45 minutes. Yours look a LOT more appetizing than mine! 😉

      No, the cooking time is not the same for dry beans and the beans (shell out) as I show in my video. If you put dry beans in the pint jar, and filled the jar with water, then you should process the pint jars for 90 minutes (1 hour and a half). Thank you for watching my videos.     You put out a really nice canning video on those pinto beans. Hey, just wondering - why is there a little jar on the spout of your tea kettle?? I'm being a curious george over here (question has nothing to do with the canning, but I've been meaning to ask you that for a while).

      My wife believes in drinking warm water so she keeps the tea kettle on the stove all the time. I usually have bacon and eggs for breakfast. She doesn't want any oil splatter from the bacon getting in her warm water so she turns a small jar upside down over the tea kettle spout.

    Dear Sir hello I was watching your film and I was canning too. And I was getting my beans into the 16 qt canner. I was checking the top and I forgot to check the top vent that metal one with the round thing attached to it. Well I was getting ready to start my fire and then you said to check that top vent with a knife, well I checked it and Lord the back of that vent was gone, gone, it must have fallen into my last batch water and my visiting nurse Kelley poued that water down the toilet. So that pc I need is down the toilet. Do you know whete I can order that pc? And thank you for your details on the canner. I am 98 yrs old and I still can. I can't use my 23 qt canner anymore, but I can use my 16 qt. If you had not talked abt thst top vent I would have started my canning and who knows what would have happened. You saved me from maybe getting burned very badly. Thank you so much for your details. I forget sometimes and I am so grateful I have found a very helpful film and you took so much time to show all the details. God Bless you! 👵 🙏

    Hey, I watch a lot of your videos.
    I don't have room to grow that many beans.
    Dried bagged beans - can them.?
    Why or why not.?
    I ask this because why not just dry out the fresh beans.?

      Thank you for watching my videos. You can, can dry beans but not exactly the way I show canning here. I can beans, as you see here, at the shell out stage, because they have a different and better flavor. I also let some beans go dry and store them as dry beans. I don't see any advantage to canning dry beans. The fresh beans will not dry out, to dry beans leave them on the plant until they dry, then harvest. Thank you.     I have a question that doesn’t pertain to this video !
    I watched your video on canning tomatoes and juice. I have a 25 pound box of canning tomatoes.
    My question is they have some bad spots on them. I was going to put in hot water bath and I got to thinking how would that work with the bad spots on them.
    Don’t want to ruin them !
    Please help me ASAP ! Thank You

      Some of my tomatoes also had bad spots. If a tomato doesn't have some bad spots it was likely picked green and allowed to ripen inside a house or building. I cut the bad spots out, sometimes it may require cutting half of the tomato away. After you cut the bad places out, smell of what you have left and it it smells okay, I use it.     Hello Sir, I see some eastern leaf footed bugs on my okra and tomatoes plants. I don't see quite damage but wanted to check if they harm plants and any organic remedies?

      I don't think they do much harm. Except they are a pest. The best organic insecticide is called: Pyola.

    I thought that because beans are protein, they had to be pressure cooked for 75 minutes like meat. It was a very comprehensive video though. Thank you for sharing!

      @@OldAlabamaGardener yes I guess dry beans are the difference. But pints only need to be canned 75 minutes, quarts are 90 minutes. Am I wrong? I sure hope not, cuz that's how I've been doing it

      @@loriflarson4236 I looked it up, having never canned fresh shelled beans only dried because I noticed the clock on the stove. Fresh shelled beans are 40 minutes for pints and 50 for quarts. Dried beans are 75 for pints and 90 for quarts.

    How many quarts is your pressure canner?

      My pressure canner is a Presto 23 quart. Now, this doesn't mean it will hold 23 quarts to can. I think it will hold 7 quarts for canning, but I have not canned any quarts. I can only in pints. Thank you for watching my videos. If you haven't yet, please subscribe.

      OldAlabamaGardener thanks, I like that you could can two levels of beans in that canner. I will make sure I get one that big. I have always just canned things that can be done in a hot water bath.

    Why did you put so few beans in the jars. Can you fill the jars full of them

      If you fill the jar, as the beans are cooked during the pressure canning, they will swell up and push on the jar lid, probably preventing it from sealing. And I like to have liquid over the top of the beans to prevent them from turning black.

    I watched this video, then watched your kidney bean video from last year. Why only fill the jar halfway with pintos but to the shoulders with kidney beans? It doesn't look like the pintos expanded much more in the canner.

      When I use a jar of kidney beans, it is for chili, therefore I use the whole jar and there is no left over. When I use a jar of pinto beans, if it were a full jar, there would be left over which would usually sit in the refrigerator for a few days and then get disposed of. There is only me and my wife in our household so the amount of pinto beans, in the jar, as you see in this video, is just right for what we would eat at one meal. And yes, the pinto beans did not expand as much as I thought they would. An additional thought is: If a jar of canned beans does not have liquid over the top of the beans, then the top beans will turn black, while they are still okay to eat, they don't look good, so having liquid over the top of the beans, as you see in this video, prevents the beans from turning black.       @@OldAlabamaGardener thank you for the quick reply! Either way, they look great. I didn't plant pinto beans, but, several different kinds of drying beans. I think I'll try canning the fresh shelled beans instead of letting all of the dry. Your's look alot better than mine!

      @@jolenesgarden6619 I like beans both as shell outs and as dry beans. The canned bean enables me to have some quick, as opposed to soaking dry beans over night.

    How the heck did you know there were 16 cups of beans? I kept going back on the video to see why you had 16 beans on the counter? What did you do to get that amount?

      At time mark 2:17 I show measuring one cup, and putting one bean on the cutting board. I didn't think I needed to show you me measuring out 16 cups of beans. Then at time mark 5:16 I show me counting the beans again, although, I didn't show me actually measuring the beans using the cup. Thank you for watching my videos.       @@OldAlabamaGardener I used this method for counting how many 2-cup measures I had of cut okra tonight because I knew I'd lose count! Worked like magic! LOL
