      Me too!! I got to meet him a couple times. He lived a hour from me and I asked him if I could buy some comfrey from. He met up with me and gave me a ton of starts. He refused to be paid. From that day on he emailed me weekly to check on me and also tried motivating me to start my own UA-cam channel. He was such a kind, knowledgeable, and giving man. I miss him dearly!

    Here I am nearly as old as you are and I learned from your video today. I just canned 8 pints of tomatoes and did try to not get the juice and seeds when dicing the tomatoes and putting into the jars but I still had some clear space at the bottom. I will try you method in a couple of days from now when I have some more ripe tomatoes. I planted Elephant heart tomatoes, Silver Fir Tree tomatoes and Romas this year. Thanks for all the wonderful knowledge you share, I always learn something new from you. God bless you abundantly.

    I haven’t done any canning yet because I’m so intimidated by it 😂 but I loved watching your vid. If I do this, I would prob strain the tomatoes from the juice that way it’s easier, faster and cleaner.

      Also I’ve seen many who just freeze the tomatoes and when they pull them out they let ‘em sit for a little and the skins come right off. That may be something you’ll wanna try so it’s a bit easier and less mess too.

    I scald my tomatoes for 45 seconds. Longer than a minute-disaster for me. Love your crushing tip. Changed my canning routine. Must core tomatoes!!! Canning salt a MUST USE.

    apparently even homegrown tomatoes aren't as acidic as folks think. USDA and Home Preservation Society recommend adding 1 tbsp bottled lemon juice to each pint jar or 2 tbsp bottled lemon juice to each quart jar to prevent botulism. Alternatively you can add 1/4 tsp citric acid/pint or 1/2 tsp citric acid/quart. I thought I would taste the lemon juice but it just blends in. I can that leftover juice and pulp as is to use in soup. I did put some through my food mill and got a nice, smooth juice.

    So do you just toss the tomato liquid ?? After I had to water my tomato’s so long , I’d just like to recover a couple bucks back out of my investment 😂😂.     What variety of tomato's do you grow? I mostly plant Roma's & Amish paste tomato's as my wife is Mexican & uses those types.My sister gave me a juicer so now i want to make juice too. Thanks !

    Thank you so much for you videos GREAT INFO ! I leave the skins on, and the seeds inside them. MORE VITAMINS>> I can't figure out why people deseeds them, and take the skins off for? Its got more favor with them on! When i blend them up it not tough at all its also help keeps the bright red. and its more VITAMINS it also helps to make it thicker! > I want deseed nor skin my tomato's BE SURE TO SAVE THAT JUICE ! YUM make good soups and drinks from it

    Hi recently subscribed but when i do my tomatoes hope I'm doing the right thing but I core mine after they're clean and before I scald them I also cut the little piece on the otherside it makes it easier for me anyway. So glad I found your channel thanks for all your info ☺

    After canning hundreds of 'maters without a hitch, I had my first seal to fail yesterday. So, I took the still-hot jar and contents, cleaned the lip of the jar and the seal. I then re-sealed with the same lid, ring and inverted the jar into a small boiler, brought the water to a boil and processed for 10 minutes. Afterwards, I let the jar remain inverted in the boiler for several hours. Voila! The seal set. Victory!
    *Edit* I used very, very hot tap water in the boiler before re-starting the processing.

      I would use a Sharpie marker and mark the lid so I would know what I did with this jar. The concern is how long will the lid stay sealed.

    What I like to do is core my tomatoes before I add them to the boiling water; no need for the X on the bottom, and the skin comes off in one piece!

    I put my tomatoes in the frig for 1 day..then put in water..skin pops right off..instead of adding vinegar you can add citric acid..which is what I do

    You posted that this method is not recommended for low acid foods. I was wondering why you didn't add an acetic. Love your videos. You are an excellent instructor.

    Hello I came over from Patara's channel, great video but what did you do with the tomato liquid at the end??? I strain it and use for soup and stews but I have never packed a jar like that so normally I have a lot less left over to deal with too. Thanks for a new look on tomato canning, I will be trying it.

    What do you think is the best tomato variety for slicing big, juicy tomatoes in our area? I am so sick of these mealy and meaty tomatoes. I love juicy ones and it seems like they are disappearing. I'm just thinking about trying the beefsteak and the better boys this year

      Robin: That is a good question. My first thought is, *_(1)_* don't grow a determinate tomato. Why? Because they are hybridized to produce all their tomatoes pretty much at the same time. These tomatoes were developed for sale in the stores and were developed to remain firm during shipment and remain on the shelf for a longer time. It makes sense that to remain firm during shipping and storage it needs to have less juice. *_(2)_* Heirloom tomatoes, such as beefsteak do have more juice and flavor but they don't usually produce a lot of tomatoes. *_(3)_* Hybrid tomatoes such as Better Boy or Big Boy produce a lot of juicy good flavor tomatoes but because they are hybrid if you save seeds they won't come back true to the tomato you saved seed from, they will revert to something else, usually some cherry type tomato. I have always grown Better Boy, although this year I am trying one called Marglobe, it is an heirloom.     why is it not reccomended for low acid foods? i hve noticed that my canned squash salads with vinnegar stay well for years, while soups won't last very long, eccept sorrel broth. So the acidity might be the key?

      Hot water bath canning is not recommended for low acid food because e hit water bath does not get the temperature high enough to kill bad bacteria. Then the bad bacteria will cause your food in the jars to spoil and could make you sick or kill you. The only safe way to can low acid foods is with a pressure canner.

    OAG how do I know for sure how much acidity my tomatoes have? I do not know what brand they were. I just bought a beef steak tomato plant and planted. These tomatoes are not for lone term pantry but will be used up with in 6 months I’m sure. Do I need to add lemon juice or anything? I just don’t want to be feeding my family something bad. Please help I have 2 5 gal buckets that really need to be canned today. My Frist time trying to do this. I’m sorry for rambling on OAG.

      If you are not sure the tomatoes are an acid variety, then to be safe, I would add some acid to each jar. Research to see what and how much. It doesn't matter how quickly they will be used, if not canned properly, you are still at risk.

      Probably. It will depend on if the lid stays sealed. Keep watch on them and if the lid comes unsealed, then I would not eat them.

    It seems like you should add the salt after pressing out the juice, not before. The pressing would wash away much of the salt I think.

    Do you have to take the skins off? I have a ton of cherry tomatoes and I don't know what to do with them or how to can.

      Do you have a pressure canner, not pressure cooker.? You need to have a pressure canner to can low acid vegetables such as corn.

      I grow a hybrid tomato called: Better Boy. And a hybrid cherry tomato called: Sweet 100. Heirloom tomatoes don't produce as heavy as hybrids. As long as I can get Non-GMO Better Boy and Sweet 100 seeds I will continue to grow them.

    If you have time save those peels and spread them in your dehydrator DrIed hard a crushed to powder that stores well in small jars AND can be spooned out make a punch up for soups and stews..or home made V-8 hahahahaha...If climate gives you any grief over shelf life add a teeny tiny bit o celery salt.

    If your picking vine ripen tomatoes I suppose you made a deal with the mockingbirds. I still pick early not in agreement yet.

      Good evening Doc. I try to leave them on the plant as long as I can. I think vine ripened tomatoes taste better. But if I see damage, I will take them a couple days early. Right now, I need a good slow rain to soak the ground. Thanks for stopping by.

    I did this last year. Too much work for me. I fermented my garden matoes this year. Much faster process.
